School may be looming over our heads, but if you ask me, summer is just getting started and the grill is just heating up! Summer is still in full swing at our house, so the grilling recipes are still plentiful around here.
Our days our spent outside enjoying the weather, soaking up the sun and swimming in the pool. By the time we realize we’ve starving, there’s no time to throw something in the oven. That’s why we love Eckrich Smoked Sausage. Throw them on the grill and in no time, you’ve got a delicious dinner on the table like these Chicago Style Italian Smoked Sausage Sliders.
I love nothing more than taking a classic recipe and making it all my own. Which can be said for these Chicago Style Italian Smoked Sausage Sliders. They’re kind of a mouthful to say, but man are they delicious.
They’re a twist on a Chicago style beef sandwich. One look at Original Smoked Sausage Links at the Meijer and I knew these would be amazing on slider rolls with smoky provolone and giardiniera and boy was I right!
I’ve been a fan of Eckrich products for as long as I’ve been eating. My parents cooked with them and now I cook with them. They’re Polska Kielbasa is one of my family’s favorites! I love their quality, their naturally hardwood smoked flavor and they’re a consistent and trustworthy brand. There website is also packed with delicious recipes so head on over and check it out.
We absolutely love a good Chicago style sandwich dripping with ooey, goeey cheese and giardiniera. If you’ve never heard of giardiniera, it’s pickled vegetables in spices, oil and vinegar. You can purchase it at the store (make sure you get either Chicago style or a smaller dice) or you can make your own. Whatever you do, don’t skip it.
To make these Chicago Style Italian Smoked Sausage Sliders, start by grilling up some Eckrich Original Smoked Sausage Links. Slice a link in half, and then slice it in half lengthwise. Place it onto your slider roll and top with cheese. Add giardiniera and you’ve got yourself one tasty dinner or appetizer worthy of a party!
These Chicago Style Italian Smoked Sausage Sliders have become our new summertime staple and lucky for us the fun doesn’t have to stop in the summer because when there’s 2 ft of snow on the ground, I’ll be grilling these baby up inside!

Ingredients
- 1 package Eckrich Original Smoked Sausage Links
- 12 slider rolls
- 12 slices provolone
- 3/4 cup giardiniera
- sliced banana peppers, optional
Instructions
- Preheat grill to medium-high and grill Eckrich Original Smoked Sausage Links until cooked through about 10-12 minutes
- Slice each link in half and then slice each half lengthwise.
- Place each half onto a slider roll and top with cheese and giardiniera. Serve warm.
