Today is the first {official} day of summer! I always think of summer as being the day my kids get out of school but it’s calendar official today.
Yesterday marked 2 weeks until we leave for vacation and the countdown has begun. Only 13 days stand between me, a 16 hour car drive and seeing my dad and extended family in Wyoming! Bring.it.on.
And then after that, summer can come to a halt. I do not want to start thinking about back to school.
Truth be told, I meant to post this recipe back in April. Posts got pushed aside and other food took precedence, but my mind couldn’t stop thinking about these Grapefruit Olive Oil Mini Cakes. They’re simply amazing.
I love anything grapefruit, especially in my drinks, so these mini loaves were destined to be a hit! Grapefruit is slightly bitter but when paired with olive oil and a little bit of sugar, it takes on a sweeter flavor. And thanks to the extra virgin olive oil, these Grapefruit Olive Oil Mini Cakes are super moist, light and airy.
I topped the mini cakes with a glaze of powdered sugar, grapefruit juice and zest which was the perfect addition. I think these mini cakes are perfect for brunch, dessert and would be lovely at a bridal or baby shower. They’re elegant and delicious.
I’m not technically sure when grapefruits are in season, although according to google they are available all year round but Ruby Red Grapefruit are in season from November to May. All this times me is that I should have posted these at least a month ago, but oh well. Again, I loved them so much, there is no way I am waiting until November when all the Thanksgiving posts are flying to share them.
To me, these are bright and sunny and remind me of summer, making today, the first day of summer, the perfect time to share them. Now go out and find some grapefruits or some grapefruit juice will work too. Either way, you’ll want to make these again and again!
Grapefruit Olive Oil Mini Cakes

Deliciously moist and bursting with fresh grapefruit flavor, these Grapefruit Olive Oil Mini Cakes are cute, delectable and delightful making them perfect for any occasion!
Ingredients
Mini Cakes:
- 1 3/4 cups cake flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/4 cup grapefruit juice, freshly squeezed
- 2 grapefruit, zested and segmented, segments chopped fine
- 1/3 cup plain yogurt
- 3 large eggs
- 2/3 cup extra-virgin olive oil
Glaze:
- 1 cup confectioners' sugar
- 2 tablespoons grapefruit juice, freshly squeezed
- Zest of 1 grapefruit
Instructions
- Preheat oven to 350 degrees
- Grease mini cakes pan thoroughly with cooking spray and place mini pans onto cookie sheet.
- In a medium bowl, whisk together dry ingredients; flour, baking powder, baking soda, salt and sugar, and set aside.
- In another medium bowl, whisk together wet ingredients; sugar, grapefruit juice, yogurt, eggs and extra virgin olive oil.
- Make a well in the center of the dry ingredients then gently pour wet ingredients into the center and whisk to combine.
- Fold in segmented grapefruit and zest.
- Place about 1/2 cup batter into each mini cake pan.
- Bake the cakes until golden brown about 30-35 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool completely.
- While the cakes are cooling, whisk together powdered sugar, grapefruit juice and zest.
- When cakes are cool, drizzle glaze all over the tops. If desired, garnish with extra zest.
