The grill and I are still best friends cooking up everything from appetizers to desserts. I have gotten quite good at the grill these days almost to grill master status (yeah right!)
A few years back I made strawberry shortcake kabobs and they were amazing. I skewered pieces of angel food cake and strawberries and then drizzled them with sweetened condensed milk. The milk caramelizes as it grills and they were summertime perfection.
Then I discovered Chef Shamy Vanilla Bean Honey Butter and to be honest, I’ve been spreading it on everything these days. Toast, bagels, pound cake, you name it and I’ve put it on there. I love the flecks of fresh vanilla bean and the sweet flavor it brings to desserts.
It just so happens to work brilliantly in this Grilled Strawberry Shortcake.
I’m back again and participating in another food inspired week of fun. This week it’s all about Cookouts and food.
Personally, I love a good cookout where the food is plentiful and there’s a variety to pick from. I usually load my plate with a little bit of everything and go back for seconds on my favorites (and still save room for dessert, which is arguably my favorite part)
When summertime hits and the strawberries are abundant, there is always a clam shell of them in my refrigerator. They’re a family favorite so we always keep them around.
Sometimes, they do get forgotten about. I sprinkle them with sugar and let them sit for a few hours and we’ll have strawberry shortcake for dessert.
We love both angel food cake and pound cake but for this recipes, I want thick slices of a hearty bread that could stand up to the grill. While I’ve grilled angel food cake before and it works, I was feeling the pound cake.
I spread Chef Shamy Vanilla Bean Honey Butter on one side of the bread and placed the slices onto the grill. Do not blink, do not walk away, it only takes a minute for these babies to have great grill and char marks.
This Grilled Strawberry Shortcake is sweet, slightly crunchy and the perfect way to end a summer day.
