Oh Summer, how I love thee….let me count the ways. Sun, warmth, ice cream, grilling, swimming, cookouts, no bake desserts…and not necessarily in that order. I’m a summer girl and fall isn’t far behind. I also like spring, but winter, I loathe winter. It’s frigid cold here in the Midwest and I don’t even get me started about the snow. While pretty to look at for .3 seconds I’m over it before it hits the ground. I dream of living somewhere where the temperatures don’t drop below 50 degrees….someday.
In the meantime, I will drown my sorrows in these No Bake Mini Key Lime Pie Cheesecakes that make me feel like I’m in the Caribbean. There’s something about lime that instantly transforms my being and whisks me away to a tropical oasis, sipping on a margarita (on ice, never frozen) soaking up the sun and floating the day away. These key lime cheesecakes sort of have the same effect minus the alcohol, sun and pool. However, they do make me feel like I’m on vacation.
Much like the S’mores Oreo, I think Nabisco nailed the Key Lime Pie Oreo. I thought they were tangy, had a strong flavor of lime and the graham cracker cookie was spot on. I looked all over for them and was only able to come up with them at one local grocery store. And it’s a good thing I found them because I had to return to the store 3 times to purchase more. Yes, that is how many times an entire package was consumed before I could make this recipe. I finally had to hide the last package I bought so I could prepare this recipe for you. That is how much my family enjoyed these.
I’m a freak when I hear of a new flavor of Oreo and I’m the first of all my friends to purchase them. Friends text me to ask how I liked the latest flavor as they know I’ve already been to the store to scour them out before they’ve officially been released. You’re welcome friends, for all the pounds I’ve gained in consuming Oreos and taste testing them for you. Nabisco, if you are reading this, I vote myself to be an official new flavor Oreo taste tester. Just sayin’
As soon as I knew they were coming out with Key Lime Pie Oreos, I had to find them. I absolutely love key lime pie. Lime is one of my favorite flavors for how refreshing and bright it is. I also knew exactly what I would make with them, cheesecake. And what better way than a no bake cheesecake so no one has to turn the oven on in this heat.
I found these cute little ” target=”_blank”>Ball Storage Jars on Amazon and they were perfect for the mini part. They hold 4 ounces and came with screw on plastic lids for easy storing and freezing. There’s also a recipe on the back to make baby food. So for all you moms out there, I highly recommend these cute versatile jars.
All you need for this recipe is 5 ingredients;key lime pie Oreos, butter, cheesecake pudding, 1 lime,milk and whipped cream. You start by crushing up the Oreos, I used my food processor, until they are crumbs. You can make them as pulverized as you’d like but I like a little bit of chunks in mine. Pour in some melted butter and lay that in the bottom of your jar. You’ll prepare the cheesecake mix and then layer that on top of the graham cracker crumbs. Top with whipped cream, lime zest and more Oreo crumbs and boom, No Bake Mini Key Lime Pie Cheesecakes are done. Easy, peasy, lime squeezy.

Ingredients
- 12 Key Lime Pie Oreos, divided
- 2 Tablespoons butter
- 1 box Jell-O Instant Cheesecake Pudding & Pie Filling, 3.4 ounces
- 1 3/4 cups of milk to prepare pudding
- 2 Limes, zested and juiced (can sub key limes or key lime juice)
- whipped cream of choice (Cool Whip, Reddi Whip, TruWhip, homemade)
Instructions
- Start by preparing your pudding so it can set up in the refrigerator while you crush up the Oreos. Most pudding mixes require 2 cups of milk. for this recipe, you'll want to replace 1/4 cup of milk with lime juice. So place your pudding mix into a bowl and whisk in 1 3/4 cups of milk followed by 1/4 cup lime juice.
- Set aside in fridge to set up for 30 minutes.
- Place 8 Oreos in a food processor and pulse until crumbly. Slowly add in melted butter and pulse a few more times until mixed starts to clump together.
- Place 2 Tablespoons of your crushed Oreos in the bottom of each of your mason jars and press down with the end of a tart press or your fingers.
- Add 1/4 cup pudding to the top of your crushed Oreos in each jar.
- Top with whipped cream, lime zest and Oreos crumbles. Garnish with additional Oreo, right before serving, if desired.

Soooooooooo… I’m not too terribly sad about summer ending. I love the summertime. Really, I do. But I live in Texas, and it’s been in the 100’s for most of the month, and I’m desperately over the heat. All my friends who live in the Midwest keep talking about how their summer is awesome, and I’m crazy jealous because it is unbearable here now. That being said, our winters in Texas are nowhere near as intense as the ones y’all experience in the Midwest, so it’s a trade-off. Maybe I need to summer where you are? Hmm. Food for thought.
These little cheesecakes are adorable, and they look like the best way to transport yourself to the tropics if you don’t have a plane ticket. I love that food can take us somewhere else, and I’m absolutely gonna have to give these a try because I haven’t been to the beach in ages!

Dear Megan – I absolutely LOVE your little key lime summer desserts. They are so cute and I love anything key lime. I just bought some key lime flavoring oil but I see that is NOT what is needed here. Fresh lime juice. Woo hoo!!! Enjoy what’s left of your summer. I feel your pain on the snow issue. In NH we had 90+ inches of snow last year. But that was nothin’. Just south, Boston had 108″. So I’m not exactly complaining. Well kinda sorta.
