If anyone was wondering, I survived the first day of school. Oh yeah and so did my daughter, with flying colors of course!
There were definitely tears, from me, not her, but I went home and kept myself busy. 6 hours later, my home was clean from top to bottom. It felt great to get so many things accomplished on a Monday so I could focus my attention on other areas the rest of the week. Like this peanut butter and jelly banana bread.
Truth be told, I made this bread months ago and my family fell in love with it so I’ve made it multiple times since. I’ve worked out the recipe, just a little, so today I’m bringing you the final version.
Banana bread is one of my favorite things to make. My mom’s version will always be my favorite and while I have her recipe, it’s never quite the same when I make it. What is it about trying recreate a family recipe and it always failing? Happens every time.
My son absolutely loves banana bread (He loves this brown sugar stuffed banana bread!) and I usually make some at least once a week. Mainly because I forget about the bananas I was going to eat as a healthy snack until their black spots are staring me in the face begging me to do something with them. Banana bread always wins.
I saw this peanut butter and jelly banana bread on The Kitchen, my all time favorite show, and knew I had to make it immediately.
We are peanut butter lovers in this house and peanut butter and banana go so well together. Like I said before, I have made this bread many times with many different combinations of jelly. It comes over differently every time as each jelly lends its own flavor to the mix.
For this particular one pictured, I used strawberry but while I was just testing this recipe last week, I used Triple Berry (raspberry, blackberry and blueberry) It was amazing!
Feel free to use your favorite recipe of banana bread, spread a little in the pan, top with your favorite jelly and then place the remaining batter on the top. It’s that easy and it adds another depth of flavor to your banana bread. Just don’t forget the jelly and nuts on the top. It gives a little hint as to what’s inside but the real surprise is its delicious taste you can’t get enough of!

Peanut Butter and Jelly Banana Bread is a PB & J lovers dream! Switch up the jelly to create your ultimate sandwich in a baked bread form.
Ingredients
- 8 tablespoons (1 stick) unsalted butter
- 1 1/4 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup peanut butter
- 1/2 teaspoon pure vanilla extract
- 2 large eggs, at room temperature
- 1 cup sugar
- 4 ripe bananas, peeled and mashed
- 1/2 cup chopped peanuts, divided
- 3/4 cup strawberry preserves, divided
Instructions
- Preheat oven to 350 degrees and spray a loaf pan with cooking spray.
- Into a medium bowl, mix together flour baking soda and salt. Set aside.
- Into the bowl of your stand mixer, add butter and sugar and cream until light and fluffy, about 3 minutes.
- Add peanut butter to butter and sugar, mix to combine and then add in vanilla extract, eggs and bananas. Mix until just combined.
- Using 1/2 cup at a time, gradually add the flour mixture to the banana mixture. Once all flour has been added, mix until incorporated and then fold in 1/4 cup peanuts.
- Place half of the batter into the prepared loaf pan. Top with 1/2 cup preserves, down the middle, making sure to leave a 1/2-inch border between the preserves and the sides of the pan. Carefully top with the remaining batter.
- Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- When the bread is cool to the touch, spread the remaining preserves over the top and sprinkle with remaining peanuts. Cut into slices and serve.

We like to spread on a little extra peanut butter because we’re fanatics but feel free to spread on more jelly, butter or leave it plain.
Either way this bread is absolutely delicious and will become a family favorite. Who doesn’t love Peanut butter and jelly?!
