Today is my birthday. Happy Birthday to me! It also happens to be #NationalPeanutButterDay. Conscience that I love peanut butter, I think not. It was meant to be.
I received a letter in the mail, from the state, a few months ago about how I needed to go into the DMV, renew my license and take a vision test. Cue panic. Ugh, who in their right mind wants to spend an entire morning at the DMV?! Not me.
But I have to say, I was in and out in 15 minutes and the people there were the nicest. No joke! I lost 25 lbs on my license, passed the vision test and took a pretty decent photo. It was a GREAT day!
If this is an indication of my 34th year, I’m thoroughly looking forward to it.
Our love of peanut butter in this family runs deep. Our love of coffee does too. My son and daughter recently found their love of coffee (I only let them have a sip or two). Pretty sure we’re just one big peanut butter and coffee family and that’s ok with me.
I’ve told you before and I’ll remind you again. Putting coffee and/or espresso into your chocolate baked goods intensifies the flavor of the chocolate. It takes your chocolate baked goods from good to GREAT!
For the base of these cupcakes, it’s a classic chocolate cupcake with coffee extract and strong brewed espresso. I also added in some chocolate chips for an added punch of chocolate flavor.
For the frosting, it’s simply peanut butter, powdered sugar, some milk and vanilla extract.
Together they make these incredible Peanut Butter Mocha Cupcakes.
I saved a few of them to have for dessert tonight after we go out to dinner and the rest of them are going out of the house. Still trying to keep up with my New Years resolutions and not trying to put back on those 25 lbs I shed from my license!

Peanut Butter Mocha Cupcakes

Ingredients
Mocha Cupcakes
1 3/4 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup butter, softened to room temperature
2 cups granulated sugar
3 eggs, softened to room temperature
1 teaspoon vanilla extract
1 teaspoon coffee extract
1 cup milk
1/2 cup strong brewed coffee, cooled
3/4 cup semi sweet chocolate chocolate chips
Peanut Butter Frosting
10 tablespoons butter, softened to room temperature
1 1/2 cups peanut butter
2 teaspoons vanilla extract
1/4 cup heavy cream or milk
2 cups powdered sugar
optional chocolate covered espresso beans
Instructions
Mocha Cupcakes
- Preheat oven to 350 degrees F and line a muffin pan with liners. Set aside.
- In a large bowl combine flour, cocoa powder, baking soda, baking powder and salt. Set aside.
- In a large mixing bowl or into the bowl of your stand mixer, place butter and beat for 1 minute. Add sugar and scrap down the bowl as needed. Beat for 2 additional minutes. Add in vanilla and coffee extract and eggs, one at a time, until fully incorporated.
- Combine milk and coffee.
- Alternating between the flour mixture and milk mixture, slowly add into mixing bowl with creamed butter. Scrap down the bowl as needed and mix until combined. Fold in chocolate chips
- Spoon into muffin liners and bake for 18 minutes. Remove from oven, allow to cool for 10 minutes in pan and then move to a wire rack to cool completely.
Peanut Butter Frosting
- In a mixing bowl or the bowl of your stand mixer, add butter and peanut butter and mix to combine. Add in powdered sugar and beat slowly. Gradually add in in vanilla extract and cream until fully incorporated.
- Place into a piping bag fitted with a 2D tip and pipe peanut butter frosting onto mocha cupcakes. Top with chocolate covered espresso beans if desired.
