Is there one food in your house that you know will please your whole family? In our house, it’s waffles. Chocolate chip waffles to be exact. My son has been requesting waffles since he could say “waff.” When he was a baby and we were first starting to think of soft, chewy food that he could chew with his 6 little teeth the list included; pancakes, grilled cheese and waffles.
Like most people, I’ve been eating waffles for as long as I can remember. When I was growing up, we ate Kellogg’s® Eggo® Chocolatey Chip Waffles straight from the toaster, no syrup or butter required. At any given point you can find a box (or two) of chocolate chip waffles in our freezer.
One morning while looking through the freezer and remembering I had taken zero things out to thaw for dinner, I noticed we were running low on waffles. Quickly put those on my grocery list. I then proceeded to ask the dinner question to my kids, already knowing what the answer would be.
Side note, If I ask my kids what they want for dinner, the response is almost always “pizza.” So what do you do when you tired of picking up the phone to order their favorite pizza from the usual pizza place, whipping up your own or popping in a frozen one? You create pizza wafflewiches.
We are no strangers to wafflewiches in our house. I make these Bacon, Havarti and Peach Wafflewiches regularly and they are bomb.
I headed to Walmart to pick up more Kellogg’s® Eggo® Chocolatey Chip Waffles. While I was standing there, I noticed Eggo Waffles now have no artificial flavors and colors from natural sources! Eggo Waffles have always and will always be our brand of choice.
While waffles aren’t usually a part of my usual breakfast rotation, I had to try these out for myself too. I threw in a box of Kellogg’s® Eggo® Nutri-Grain® Whole wheat waffles, for myself and for the pizza wafflewiches we’d be crafting up tonight. Anytime I can feed my kids with more whole grain goodness, I’m all in!
We made dinner as a family that night. I laid out all my family’s favorite pizza topping and we got to work. It couldn’t have been easier and more fun. Each kid was able to put whatever they wanted on their pizza and that made them so happy that they could craft up their own designs and personal pizza. As for me, I was able to add mushrooms to mine without my family turning up their nose!
Not only was dinner done in about 10 minutes, it was devoured! I mean how could you resist when your favorite breakfast waffles are mashed up with your favorite dinner of choice?! And those crispy edges…I’m in love. These pizza wafflewiches were amazing! We served them alongside some extra pizza sauce for dipping which made them even more fun. Everything is always more exciting when in dippable form.

Yield 5 sandwiches
Get the kids into the kitchen and mix up your Eggo Waffles. Start with an ingredient bar full of their favorite pizza toppings to create these fun Pizza Wafflewiches.
Ingredients
1 box Kellogg's® Eggo® Nutri-Grain® Whole wheat waffles
2/3 cup pizza sauce, plus more for dipping
1 1/4 cups cheese, I used 5 blend Italian
Pizza toppings of choice; pepperoni, sausage, ham, pineapple, green pepper, mushrooms, etc.
Instructions
Place waffles into toaster and toast.
Spread 2 tablespoons pizza sauce onto 5 waffles.
Add 2 tablespoons of cheese, pizza toppings of choice and 2 tablespoons of cheese.
Place another waffle on top to create a sandwich.
Spray panini press with cooking spray and place 2 sandwiches into the press. Cook until golden brown on both side.
Cut into triangles and serve with pizza sauce for dipping.

You could easily cook this in a skillet and lay a heavy bottomed pot on top of the sandwich to press it together.
