I am no stranger to stuffing foods into apples. Around Thanksgiving last year I put apples into the slow cooker with brown sugar, oats and Butterfingers. They’re sinful and the perfect dessert for any fall gathering.
This time I went the savory route, which I also love. The apples themselves make little bowls that you can stuff with anything your heart desires.
For these Stuffed Apples with Cheddar and Sausage I used turkey sausage, carrots, onions, dried cranberries and brown rice. They turned out to be the perfect combination. The family devoured them.
I don’t know about you guys but I love to go apple picking. A bushel later and I’m wondering what to do with all of these apples. Thanks for #appleweek I should have recipes for awhile

One Pan Pork Chops with Apples and Cinnamon
Apple, Bacon and Caramelized Onion Pizza
I received this beautiful cooper roaster from Nordic Ware and ever since I’ve been putting it to good use.

I love to use roasting pans for turkeys breasts, pork roasts, popcorn and pot roast. They’re so versatile and can go from oven to table and still look beautiful!
You can totally customize these Stuffed Apples with Cheddar and Sausage to your liking. You could use stuffing inside these apples which I think would be amazing. You could use beef or chorizo, swiss cheese or sharp cheddar, dried cherries or make them vegetarian, dairy free, anything you’d like.
I love a meal when you can customize to your personal preference.

Stuffed Apples with Cheddar and Sausage

The combination of sausage, sweet cranberries and sharp white cheddar in these Stuffed Apples with Cheddar and Sausage is a trifecta of flavor in one fall inspired meal!
Ingredients
- 6 apples
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 carrot, diced
- 16 ounces sausage, I used turkey sausage
- 1 teaspoon dried sage
- 1/4 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup apple cider
- 1/4 cup dried cranberries*
Instructions
1. Preheat oven to 350 degrees F. Hollow out apples and brush lemon juice all around the insides. Place into a roasting pan and cook for 25 minutes.
2. Cook brown rice according to package directions.
3. Meanwhile, add olive oil, garlic, onion and carrots to saute pan and saute for 5 minutes. Add in sausage, sage, cinnamon, salt and pepper and brown. Stir in apple cider and dried cranberries.
Add in 1 1/4 cups of cooked rice and stir.
Place sausage mixture into hollowed out apples and top with cheese. Place back into the oven and cook for 10 minutes or until the cheese is melted.
*I did have some of the filling leftover which I placed into breakfast burritos the next day. Yum!

Cooks Tip: I think these savory stuffed apples would be absolutely delicious with cauliflower rice.
My family loved these apples and my kids think it’s the coolest thing that the apple becomes the bowl that they get to eat.
