I’m going to do my best to hold true to my promise on a recipe everyday until Thanksgiving. Up today is leftover recipe #2. I posted Turkey Carnitas the other day and my family absolutely goes crazy over them. They’re delicious because they are a twist on a regular taco using up leftover Turkey meat from Thanksgiving.
I told you guys I was shipped a Turkey directly from honeysuckle, our preferred brand when purchasing Turkeys and I also purchased one for our Thanksgiving table. So we’ll happily be having a lot of Turkey around here come Thanksgiving day. That’s why there’s a big need for using up leftover Thanksgiving foods.
What I love about this Turkey Pot Pie Slab Pizza is 1. it uses up not only turkey, but vegetables and cheese too. 2. It feeds a crowd! We like to have people over at our house, again, after Thanksgiving to enjoy some football. We’re a big football loving family around here. Therefore, I push my leftovers onto people. BUT, they don’t care because they’re delicious leftovers.
No one wants a boring plate of leftover turkey like they had a few days previous so if you turn the leftover turkey into something delicious like Turkey Pot Pie Slab Pizza, no one complains. Then the pizza gets gobbled up and you’ve made yourself some room in the refrigerator. Win-win for everyone involved.
Another thing I love about this and you’ll appreciate too as I know you’ve got Black Friday deals to snag is just how simple and easy this Turkey Pot Pie Slab Pizza is to throw together. I think the only thing it requires that you won’t already have on your grocery list is pizza dough. Which you can quick purchase or if you are the king of person who has to make your own dough, by all means do that instead. Otherwise, you should have everything ready to make this pizza.
I start by purchasing 2 pizza crusts which I lay our on a 12 x 17 jelly roll pan. Then I make a quick white cheddar roux sauce to act as the “pizza sauce.” Then it’s just a matter of topping with leftovers. We always have a vegetable medley; corn, carrots, peas and green beans so I added that, then some shredded turkey. Finally I topped with some shredded swiss cheese and cranberry white cheddar. The cranberries add a little punch of sweet and tart and the block was leftover from the cheese tray, so why not? I sprinkled a little bit of thyme onto the finished product.
Everyone LOVED this Turkey Pot Pie Slab Pizza. And guys I’m serious when I say it tastes just like a pot pie! and what’s even better it’s on a pizza crust and loaded with cheese. I love this and you guys will too and so will your friends and family and neighbors. Share with everyone, it sure makes enough to feed a crowd!
So my advice to you this Thanksgiving, get the big bird just so you can make leftover Turkey Pot Pie Slab Pizza and Turkey Carnitas. I’ve also got 1 more leftover to share with you but I’ll save that for the day after Thanksgiving as I’ve got some tasty sides and a few desserts you’ll want on your Thanksgiving table.
Turkey Pot Pie Slab Pizza

No one will be able to say no to Leftover Turkey Pot Pie Slab Pizza. Filled with extra cheese, vegetables and turkey, this pizza tastes exactly like a delicious pot pie! Perfect for game day, feeding a crowd and using up Thanksgiving leftovers!
Ingredients
- 2 packages of 13.8 Oz pizza dough
- 2 tablespoons butter
- 2 tablespoons flour
- 2/3 cup milk
- 1 cup white cheddar, shredded
- 8 slices smoked provolone
- fresh thyme
- 12 ounces frozen mixed vegetable, defrosted
- 2 cups turkey, shredded
- 1/4 cup swiss cheese, shredded
- 1/3 cup cranberry white cheddar cheese
Instructions
- Preheat oven to 350 degrees
- Grease a 12 x 17" jelly roll pan with cooking spray.
- With the cookie sheet facing you horizontally, roll out 1 pizza dough on the left hand side of the pan.
- Roll the other dough out onto the right hand side of the pan.
- Pinch the seams together, in the middle, and pushed the dough up the sides of the jelly roll pan.
- Prick the entire dough with a fork.
- Bake in the oven for 10 minutes.
- Meanwhile, in a small sauce pan, melt butter.
- When the butter has melted, add the flour and whisk until combined. Cook flour for 1 minute.
- Gradually whisk in milk until you start to form a roux.
- Add 1/2 cup white cheddar and continually whisk until combined. Add in the remaining white cheddar and whisk until smooth. Season with a little salt and pepper.
- Remove pizza dough from oven and spread white cheddar sauce all over the top, leaving a 1/2 inch border. Sprinkle on a few thyme leaves.
- Arrange slices of provolone on cheddar sauce.
- Next, layer on your turkey and then top with vegetables.
- Sprinkle on Swiss cheese and then cranberry white cheddar.
- Bake in oven for 8-10 minutes or until the top and crust is nicely browned.
- Top with additional thyme leaves, if desired.
- Cut into 32 slices.

I made a beautiful presentation of the Honeysuckle White Whole Turkey for which I’ll share the recipe with you this week so you can make it at home. It’s absolutely delicious. The flavors are wonderful, the bird is golden brown and the meat is tender and juicy. And it all starts with a great bird. Gotta love Honeysuckle! Isn’t he/she gorgeous?!
