Watermelon is one of my family’s favorite foods and we’ve been buying one since they were first spotted in the stores. We have had a full summer of activities, so anything that makes my life easier is great in my book.
Watermelon is a perfect ingredient for on-the-go meals and snacks so it’s been on repeat in this house all.summer.long.
My son must eat watermelon at every meal and what kind of mother am I to deny him. He makes sure to remind me every time we go into the store, “Mom, do we need any watermelon?” Watermelon is the best value in the produce section among fruit at only 17 cents per serving, so it’s also a huge bargain too!
One thing is for sure, that kid knows what he wants and the rest of the family isn’t complaining!
Since we always have watermelon in the house, I like to get creative with some of the recipes.
We have been super busy this summer with baseball, vacations and backyard parties so these 3 Ways to Enjoy Watermelon are what we have been doing this summer.
Watermelon Peach Salsa
Who doesn’t love a delicious and cold salsa on a hot summer’s day?
For this salsa I diced up watermelon, peaches, cucumber, red onion, a jalapeno, cilantro and mint for freshness. I added some lime juice and that’s it. Super simple.
We like to enjoy the watermelon peach salsa with tortilla chips, cinnamon pita chips and it’s amazing on grilled chicken.
It’s also a great on-the-go snack. We took some on a recent picnic and also to our friend’s BBQ Party. Perfect for traveling.
Watermelon Pizza
This one might be my favorite of the 3 because it’s so easy, delicious and can be made with whatever ingredients you have on hand for a quick on-the-go meal or snack.
Slice a large, round piece of watermelon. Onto the flesh of the watermelon, spread your favorite yogurt. For this I used vanilla Greek Yogurt.
Then add any fruit you’d like. I choose to use strawberries, blueberries and raspberries because that is what I had in the fridge.
Next, sprinkle on some granola and coconut flakes for crunch and flavor and then a healthy drizzle of honey!
Can’t stop, won’t stop, eating the watermelon pizza! It’s absolutely amazing! I’ve been packing a few of them in meal prep containers for my husband at work, for a snack or dessert, and for my son after baseball practice.
Watermelon Coconut Smoothie
If there’s something besides watermelon we have all the time in the house, it’s smoothies.
We throw fruit, yogurt, coconut water, flax-seed into a blender, puree and head out the door. There’s no better on-the-go drink that takes no more than 2 minutes to make!
For this watermelon coconut smoothie, it’s 3 ingredients; watermelon, coconut water and agave syrup or honey. You can also add ice for more of a slushy consistency.
It’s hydrating, full of antioxidants, and vitamins. My kids love it and that makes this mama happy

3 Ways to Enjoy Watermelon

Here are 3 Ways to Enjoy Watermelon which are perfect for on-the-go snacking and meals; Watermelon peach salsa, Watermelon pizza and Watermelon coconut smoothie!
Ingredients
Watermelon Peach Salsa
- 2 cups watermelon, diced
- 2 peaches, pitted and diced (I used a white peach)
- 1 cup English cucumber, chopped
- 1/2 red onion, chopped
- 1 jalapeno, seeded and diced
- 1 tablespoons fresh mint, finely chopped
- 1 tablespoons cilantro, finely chopped
- juice of 1 lime
- Tortilla chips and/or cinnamon pita chips for servings
Watermelon Pizza
- 1 large, round circle of watermelon
- 1/4 cup yogurt (I used Vanilla Greek yogurt)
- A variety of fruits of your choice (I used diced strawberries, blueberries and raspberries)
- 2 tablespoons granola
- 2 tablespoons coconut flakes
- drizzle of honey
Watermelon Coconut Smoothie
- 8 cups watermelon, cubed
- 2 cups coconut water
- 2 tablespoons honey or agave nectar
Instructions
Watermelon Peach Salsa
- Combine all ingredients into a bowl. Store in refrigerator until ready to serve.
Watermelon Pizza
- Cut a large, round circle of watermelon to use as pizza base.
- Spread yogurt onto surface of watermelon.*
- Add fruit, sprinkle with granola, coconut flakes and a drizzle of honey.
Watermelon Coconut Smoothie
- Place all ingredients into a blender and blend until smooth.
*I found cutting the watermelon into slices and then placing on the toppings worked best.
These are just 3 Ways to Enjoy Watermelon but we also love to enjoy a slice with our dinner.
All 3 of these recipes were made with 1 watermelon and I still chopped up the other half to enjoy straight from the fridge.
