Let me first start off by apologizing for being MIA for a week. Last week kicked my butt. Between school, my full time job and planning for my girlfriend’s 40th birthday party, I had no time for anything else. Now it’s Monday and I’m still trying to get organized. Do you guys ever have weeks like that where no matter what you do you cannot get caught up? Oy vey! Hoping my assistant will show up soon. Alas, she must be lost with my personal barista.
While last week was chaotic, my son had wonderful first full week of school. He loves it which makes me so very happy. My girlfriend’s 40th birthday was a ton of fun and shout-out to her, Happy Birthday Carrie! ?????
I decided to cap off my Sunday night by relaxing and tuning into MTV’s VMA show. It’s the one time a year I tune into MTV otherwise I think the channel is trashy garbage much like the award show was last night. But I love me some music and some, Justin Beiber. Did I just publicly announce that? Does that make me a belieber? Oh well! I can’t help it, I mean did you see his moves last night? And no, just no, let’s not talk about his Kate Gosselin hair. That I am NOT diggin’. I was also not diggin’ Miley’s outfits or lack there of or Kim Kardashin’s stylist choice on her garbage bag that accentuated all.the.places. We shall not even mention Kanye West’s speech ramblings. Uh, what was that?! What we can talk about is Ms. Swift. What a class act she is. I wanna be BFF’s with her. And I bet she’d like this pie.
So, I’m hoping I can make it up to you by posting this beautiful peach pie and that you’ll forget I was gone for a week because you’re already dreaming about eating this pie. It’s the only thing you can think about right now. Right? Right. Glad we are on the same page here.
I first had this pie last summer in Wyoming during our yearly family reunion. My Aunt Christy said she was going to make dessert and it was going to be this Peach Pie. I helped her peel and slice the sweet peaches and couldn’t wait to see how this would turn out. As much as I love peaches, I had never made or eaten a Peach Pie before. Boy, am I glad this was the first one I had ever had because I’m not sure another Peach Pie could stack up to this one.
After all the work I put into peeling and slicing the peaches, I’m lucky to have even gotten a slice that night. I mean, when you’re in a house with 20 other people, food moves quickly, especially dessert and especially this Peach Pie. We were like hawks checking on this pie while it baked. About 30 minutes after this pie came out of the oven, not even one crumb was left in the pie plate, not one.
I loved it so much that within 1 day of being home from vacation, I made this pie. I’m ashamed to admit that my husband and I ate the entire pan with 24 hours. That’s how irresistibly good it is. Fast forward to Wyoming this summer. My aunt made this pie again, but this time, she made 3 pies in 1 night. Again, 20 people in the house, these pies didn’t stand a chance of making it through the night. Not a crumb was left for breakfast. Bottom line here, make this Peach Pie people!
I cannot claim this recipe, as it is not my own. I recently asked my aunt if I could share the Peach Pie on the blog, as I know it’s her sweet friend, Debbie Vetter’s recipe. Debbie is a farm wife who grew up on a dairy farm. She’s taught my aunt how to make this peach pie, peach jam, how to freeze apples and a shared with her a recipe for corn salad that I’ll be sharing with you soon too. I’d love to visit her on her farm sometime. She has a summer kitchen in her barn where she husks and cuts the corn off the cobb so she can freeze gallons of it for the winter months. How wonderful it would be to enjoy sweet corn all year-long. Now do you see why I’m holding onto every last second of summer. Summers bounty is something to appreciate and savor!

Wow your guests with this sweet and luscious Peach Pie. It's simple to put together and has a taste that is out of this World. It's the perfect dessert for all those wonderful and fresh summertime peaches!
Ingredients
- Pie Crust:
- 1 1/2 cup vegetable Shortening
- 3 cups All-purpose Flour
- 1 whole Egg
- 5 Tablespoons Cold Water
- 1 Tablespoon White Vinegar
- 1 teaspoon Salt
- Pie Filling:
- 6 peaches, peeled and sliced
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1/3 cup flour
- 1 stick butter, diced into small pieces
Instructions
- Pie Crust:
- In a large bowl, using a pastry cutter or two forks, blend together the flour and shortening until it resembles small pea like crumbs.
- Beat the egg in small bowl and pour into flour mixture.
- Add in water, vinegar and salt and stir together just until combined. Do not over mix.
- Separate the dough in half and roll into a ball.
- Place each ball of dough into a resealable bag, seal them up and slightly flatten with a rolling pin.
- Place them in the freezer until you need them.
- If you are using immediately, chill the dough for at least 30 minutes before rolling out and using.
- Then allow the dough to thaw for 20 minutes.
- On a floured surface, place your dough and starting in the middle, roll out the dough until it's slightly bigger than the pan you are using.
- Carefully lift the dough from your work surface and press into pan make sure it covers all sides.
- Pie Filling:
- Preheat oven to 350 degrees
- Place all ingredients into a bowl and stir to combine.
- Pour filling into pan and bake in oven for 1 hour.
- After baking,allow pie to cool completely before slicing.

Peach Pie Filling recipe from Debbie VetterPerfect Pie Crust via the Pioneer Woman*recipe makes 2 crusts. I usually freeze the other one for later.You could use a store bought pie crust

I’m serious when I tell you this. This Peach Pie is heaven in a bite. The peaches are creamy and oh so sweet. The crust is buttery and flaky and not overwhelming so the peaches really shine through. It’s so simple to put together so you have no excuse but to make this, now. It’s not too late. Peach season isn’t over yet and fall isn’t official until mid September. No excuses, people!

Anyways, I just love this post! Peach pie is one of my very favorites and this one looks so wonderful. I personally love pies that are a little more rustic so I also like that I won’t have to fuss with a top crust here. It really lets the fruit inside shine without there being too much dough to cover up their dreaminess.
Great recipe and I’m so glad your aunt didn’t mind sharing it with you and with us. I felt like I was there with you when you were describing making the pie for the first time and the farm that your aunt’s friend lives on. Family and friends are the most important ingredient in cooking I think!
