Did you grow up eating zucchini bread? I for one did not and I’m pretty sure I would have turned my nose up at something green in my bread. I’m not sure the first time I had zucchini bread but I do remember being pleasantly surprised that it didn’t taste like zucchini. Don’t get me wrong, I love zucchini but in my bread and with chocolate I wasn’t sure how it would taste. It’s delightful and I like it so much, that I grow zucchini in my garden every year just so I can make zucchini bread!
Anyone have a garden this year? Did you grow any type of squash? Well I’m not sure about you but my zucchini plant is outta control. I’ve sauteed, spiralized, baked and eaten the heck out zucchini this summer. Fall is tomorrow (bring on the pumpkin) but I’ve got a few of these loaves stocked in the freezer for when my garden is dormant and that makes me one happy girl!
I love zucchini in baked goods. It makes everything so moist due to its high water content. Zucchini are also low in calories, have a mild flavor and boast other health benefits which makes it great to place in baked goods. Added health benefits without even knowing your getting them? Perfect. Especially for picky eaters like my son. He never even knew what he was eating and because it was smothered in chocolate, he loved it. I’m pretty sure the amount of chocolate in this bread cancels out any good calories you might be consuming but let’s just stick to the fact this bread is the dabomb.com, mmmkay?!
Let me also mention this is one highly anticipated recipe. I have tried to post this recipe 4 times but my server is a tad overloaded at the moment due to the pleasantly overwhelming about of traffic my Queso Fundido Totchos post is receiving. You guys must like football and food as much as I do 🙂
Back to this bread. It really couldn’t be an easier recipe. I found it while perusing BHG magazine but changed it quite a bit to suit my liking. The result was far more amazing that I thought and I am so glad I get to share it with you right before zucchini season comes to an end. Don’t worry though, you can get zucchini all year round in your grocery store, SCORE!
After I baked the loaf and it was cooled I tried my hand at the invisible pour method all the cool bloggers have mastered. It was my first attempt so go lightly on me. I also just ordered a remote for my camera so I can myself master this pour…with 2 hands. The point though, chocolate drizzle, and lots of it. I went a little crazy. But that’s ok, because it’s my bread and I can put as much on there as I’d like. Use your own discretion on the amount you want to drizzle on but I highly recommend er on the side of LOTS! SO good.
So being all honest here and all, I may or may not have consumed the entire loaf myself as it paired really well with my morning coffee. opps. Eating the entire loaf isn’t 100% true, everyone in the family had at least 1 and I had at least 9… This recipe is on of those where you go in for a small slice, reasoning with yourself that is all you need, consume said slice and then admit it wasn’t enough only to cut yourself another slice. That’s what happened every.single.time.
So if I haven’t convinced you enough to make this Chocolate Chunk Zucchini Bread, just look at the inside. Luscious and bursting with flavor. It screams deliciousness with chocolate chunks, cinnamon, walnuts, and nutmeg. It’s perfect for the fall and pairs alongside coffee and or tea first thing in the morning to make a delightful breakfast. It’s also really tasted warmed slightly so the chocolate becomes all melty again. Mmm…

Chocolate Chunk Zucchini Bread

Deliciously moist, chocolatey, flavorful from warm spices such as cinnamon and nutmeg, and finally drizzled with more chocolate, this Chocolate Chunk Zucchini Bread will have even the pickiest eaters going back for a second slice!
Ingredients
- 1 1/2 cups White Whole Wheat Flour
- 1/2 Tablespoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 egg, lightly beaten
- 1 1/2 cups zucchini, unpeeled and shredded
- 1 cup sugar
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1 cup dark chocolate chunks, divided
- 1/3 cup walnuts, chopped
Instructions
- Preheat oven to 350 degrees
- Grease the bottom and all four sides of a loaf pan and set aside
- In a medium bowl, stir together flour, baking powder, cinnamon, nutmeg and salt.
- In another medium bowl, stir together egg, zucchini, sugar, applesauce and vanilla.
- Make a well in the flour mixture and pour wet ingredients into the well.
- Mix together just until combined.
- Stir in 3/4 cup dark chocolate chunks and walnuts
- Pour batter into prepared pan.
- Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
- When the loaf is finished backing, allow to cool in pan for 20 minutes and then carefully remove from pan and allow to cool on a wire rack for an hour.
- When the loaf if cooled, in a microwave safe bowl, melt remaining chocolate chunks in 30 second intervals until completely melted.
- Drizzle over the top of the bread and allow to set for 30 mins.
- Slice and enjoy!
