Sheet Pan Key Lime Pie is luscious, dreamy and a creamy classic made all on one sheet pan to feed a crowd!
How about a dessert dip like this Key Lime Pie Dip!? It’s delicious!
Lime is one of my favorite flavors.
When I smell a fresh lime, I can’t help but think of a delicious margarita, salsa and summertime.
There is just something about the freshness of lime that brings immediate sunshine to mind.
So when Melissa’s Produce sent me a box full of goodies and there were key limes inside, I was giddy!
Along with all the other amazing produce, crepes and dessert sauces they sent. BEST.MAIL.DAY.EVER.
Several years ago, I went to Jimmy buffet’s Margaritaville and had what was the most delicious cocktail of my life. It was a Key Lime Pie Martini.
I’m putting it on my to do list to remake but in the meantime, you’ll have to make this Sheet Pan Key Lime Pie. It’s equally as delicious, just not drinkable.
WHAT ARE KEY LIMES?
Key limes are miniature versions of limes. They are about an 1/8 the size of a regular lime.
They have more of a tart flavor, higher acidity and are more yellow than a regular lime.
I see them in the grocery store next to the other citrus fruits so you should have no problem finding them.
I also happen to love sheet pan meals, like these Sheet Pan Mini Meatloaves and these Sheet Pan Chicken Fajitas so when it comes to making desserts in a sheet pan, it’s a no brainer.
SHEET PAN KEY LIME PIE
I really love to bake pies into a sheet pan. I also made Sheet Pan S’mores.
Some people call sheet pan pies Slab Pies. Either way you choose, they are the same thing. they are both made in a Jelly Roll Pan.
So for this Key lime Slab pie, you make a graham cracker crust.
Combine key lime juice, zest, sweetened condensed milk, eggs, vanilla and salt.
Pour that into the pre-baked crust, bake for 10 more minutes and you’ve got yourself a sheet pan pie that will feed about 20 people.
CAN I USE A STORE BOUGHT PIE CRUST FOR KEY LIME PIE?
Yes, absolutely. I happen to love a good ole graham cracker crust, but a store bought frozen pie crust, will work too.
You’ll just need to roll out the dough into a 19×14-inch rectangle and place into the 15 x 10″ pan. Cut off any excess that reaches over the sides of the pan.
Prebake the pie crust, for 7-8 minutes, add the key lime filling and bake again, for an additional 10 minutes or until just set.
CAN I USE REGULAR LIMES INSTEAD OF KEY LIMES IN KEY LIME PIE?
Yes, by all means. Key limes are much smaller than regular limes, so you will need less limes to obtain 1 1/4 cups of juice.
Please do not purchase the key lime juice in a bottle. I never recommend purchasing citrus juices in a bottle, they’re just plain gross, do not taste like the rest thing and contain preservatives.

Sheet Pan Key Lime Pie

Sheet Pan Key Lime Pie is luscious, dreamy and a creamy classic made all on one sheet pan to feed a crowd!
Ingredients
- 3 cups graham cracker crumbs, (about 2 1/2 packages)
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 2 (14 oz cans) sweetened condensed milk
- 2 large eggs
- 2 tablespoons key lime zest
- 1 1/4 cups (about 5 lbs worth) fresh key lime juice*
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- whipped topping, lime zest and lime slices for garnish, if desired
*Can't find key limes? You can use regular limes.
Instructions
- Preheat oven to 350°F degrees. Coat a 15 x 10" jelly roll pan with cooking spray.
- Process crackers in a food processor until fine crumbs form. Add in sugar and butter.
- Press crumb mixture into prepared jelly roll pan and bake for 8-10 minutes or until golden brown. Remove from oven and allow to cool.
- Into a large bowl whisk together sweetened condensed milk, eggs, lime zest, lime juice, vanilla and salt. Allow mixture to sit for 10 minutes to thicken.
- Pour into prepared pan and bake for 10 minutes or until just set.
- Cover with saran wrap and place into the refrigerator to firm up for at least 4 hours.
- Serve with whipped topping, a sprinkle of lime zest and lime slices, if desired.
