If you haven’t noticed around here, I’ve gone pumpkin. Lots o’ pumpkin going on around here. I posted Pumpkin Spice Truffles and Pumpkin Latte Scones and while these are not titled with the word “pumpkin” there’s pumpkin flavoring in them. Sorry, I got on the pumpkin train and just haven’t gotten off yet. However, I do have a post coming for you that you will either thank me for (it’s majorly delicious) or cuss me out for (break out the fat pants). Either way, you’re gonna love it.
I really love the flavors of fall. Cinnamon, apples, pumpkin, nutmeg, you name it, I love them all. There’s something about the combination of all of them and that instantly makes me feel all warm and cozy. When the colder weather rolls around, I always add a pinch of cinnamon to my chili. You can’t taste it but it’s the kind of spice that just hits the back of your throat and warms up your whole mouth. It’s delicious and I recommend you try it next time you make a hearty, beefy chili. These cookies are bursting with fall flavors from all the pumpkin-y goodness that is going on in them.
I have to admit, I’m loving the weather lately. I mean hoodies and leggings… yeah I’m down for that. Although, I’m still rocking the flip-flops as my feet can’t take the sweaters just yet. However, I did just buy some really cute fringe boots that I’m dying to wear. May just have to break them out this weekend. As I type this post, I am watching the leaves fall off the trees from my window. Fall may be the one time I enjoy living in the Midwest. the Midwest falls are the best. Well, that is because I haven’t been out East. My dream is to travel out East during the fall and just drive and drive and drive. I can only imagine it’s beauty. {Sigh} Some day…
For the time being, I’ll just sit back, watch the leaves fall, drink my coffee and indulge in all things pumpkin. Starting with these cookies. And did I mention this is the FIRST cookie recipe on the blog? What the what?! How have I not posted a cookie recipe before. Don’t know folks but this one’s a goodie, so I must have been saying the best for the cookies first debut of the blog. Right….
I’d been wanting to make monster cookies for a while and then I got this really great idea to make an Autumn Monster cookie. See last year I discovered Jif’s Whipped Peanut Butter and Pumpkin Pie Spice Spread. Not lying when I say, it’s the best ever. I mean I love Peanut butter and pumpkin pie spice and then Jif went ahead and just combined the two. Genius. And no, I am not being compensated to say that, but if Jif wants to send me a year supply of their peanut butter who am I not to oblige.
Monster cookies usually always start out the same way. Peanut butter, oats, chocolate chips, m & m’s and other usual cookie ingredients. So instead of using all regular peanut butter, I subbed in some of the pumpkin pie spiced peanut butter, used pumpkin pie spice chocolate chips and stuck with regular m&m’s because some things are just better left the way they are intended.
I thoroughly enjoyed these Autumn Monster Cookies and may or may not have eaten two of them while I was photographing them. Oopps. No worries though, I sent the rest of them to work with the hubs and much to my delight, his coworkers LOVED them. I always feel so proud and have a sense of accomplishment when someone enjoys my cooking and/or baking. So thanks hubby’s coworkers for being my guinea pigs when it comes to the blog food. Oh, and don’t worry, there’s more food where that came from and baking season is on the horizon. So brace yourselves and grab your fat pants!

Monster cookies are taken up a notch with the flavors of Autumn f making them both delicious and festive. Peanut butter, pumpkin pie spice, white and pumpkin spice flavored chocolate chips and fall colored m & m's make these autumn monster cookies the perfect treat to serve all season long!
Ingredients
- 1 stick of butter, softened
- 1 cup sugar
- 1 1/4 cup brown sugar
- 3/4 cup Jif Whipped Peanut Butter & Pumpkin Pie Spice Flavored Spread
- 1/4 chunky peanut butter
- 3 eggs
- 1 teaspoon vanilla
- 4 1/2 cups oats
- 2 t baking powder
- pinch of salt
- 1/2 cup NESTLÉ® Toll House Pumpkin Spice Morsels
- 1/2 cup white chocolate chips
- 1 cup Fall colored M&M’s
Instructions
- Preheat oven to 350 degrees and line a baking sheet with a Silpat, parchment or cooking spray.
- In the bowl of your stand mixer, fitted with the paddle attachment, cream together the butter and sugar.
- When well incorporated, add in your peanut butters until mixed and well combined.
- Slowly add in your eggs, one by one, only adding in another after the first is combined.
- Add in vanilla, oats, baking powder and salt.
- Once all incorporated add in your chocolate chips.
- Fold in M&M's.
- Using a medium size scoop, drop cookie dough onto prepared baking sheet.
- (I flatten mine a little and then add a few mom M&M's to the top to make them look pretty)
- Bake 10-12 minutes or until golden brown around the edges
