How’s the fall weather in your neck of the woods? Our weather in central IL is still proving to be nice, minus today and all the rain we’re having, and the snow predicted on Saturday….ok wait, so let me rephrase that. Our fall weather is becoming that of what Fall should be. Cool, rainy and temperatures dropping. All of the leaves have all but fallen off the trees and soon they’ll be covered with snow and ice. Brrr… makes me cold just thinking about it.
We were blessed this past weekend with weather in the 60’s and the kids spent their days outside running around. Nothing makes me more happy than the laughter I hear, from my kids, playing outside with their neighborhood friends. I’ve said it time and time again, but we are so lucky to live in our neighborhood. My children are 5 and 3 and the neighborhood kids range in age from 4-13. The 13-year-old is our babysitter, so yeah we’ve got one of those in our backyard, too. It’s like we’re the Real Housewives of Central Illinois, without the beamers, plastic surgery and drama. Don’t you just wish you lived in our neighborhood?! Oh and also, we’ve got a food blogger (that’d be me) and a food sales rep. So not only are our bellies full, but our hearts are as well. ?
I’ve mentioned before, as a neighborhood, we have an Annual Friends Thanksgiving. We head over to the neighbor’s house and everyone brings a dish or two to pass. I always bring my sweet potato casserole and another dish, usually something non traditional Thanksgiving. I like to throw everyone off a little bit.
It was the night before the big turkey fry so I headed to Target to look for something I could whip up in a snap before the party. I was going to go the easy route and just find something I could pop in the oven and bring over but then I was reminded of those little pinwheels you always see at parties. I love those things. They’re delicious, bite sized and easy to eat. Everyone likes small bites as they’re so much fun, am I right?!
As I’m cruising down the frozen aisle, I saw the MorningStar Farms® products. I’d had them before, as I love their black bean burger, but I had no idea they had buffalo wings. And if you know me, I LOVE buffalo anything. When I was pregnant with my daughter, I craved spicy buffalo. I immediately grabbed a box and my mind went bonkers trying to figure out how I was going to incorporate these into little pinwheels I could bring to pass. Although, I could have gone the easy route, baked them in the oven and brought them over, as they’re delicious enough on their own, I wanted to take them to another level. Everyone loves a good buffalo wing but no one would expect to see them at a thanksgiving meal.
I started by baking the wings in the oven, per the directions on the back of the box, and when they came out, I chopped each nugget into 8 pieces. I also decided to eat a buffalo wing on its own and I will definitely be buying another box of these soon so I can snack, eat the whole box in one sitting, by myself. The crunchy breading on the wings was so on point! They’re so good! Now I love a good chicken buffalo wing, but these veggie buffalo wings are so tasty, no one would ever know they’re vegetarian! I set the remaining nuggets aside and began to work on the blue cheese dressing for my slaw.
Did I mention, when I have anything spicy buffalo, I must have blue cheese? My dad makes a fantastic blue cheese, as you can make from this post, Strawberry Basil Bleu Cheese Burgers, but I decided to make my own subbing in Greek yogurt for the mayonnaise and sour cream. It turned out so delicious and lighter on the calories, so I may or may not make it this way from now on, sorry dad.
For the coleslaw in these Buffalo Wing Pinwheels I went with the typical items you always see paired with buffalo wings, carrots and celery. I also added in purple cabbage and a few handfuls of coleslaw from a bag. This saves you from having to chop up a bunch of cabbage and let’s be real, I love convenience.
Next, came the assembly and rolling part. Place 1 tablespoon of reserved blue cheese on your tortilla. Layer on approximately 20 pieces of buffalo wings, 1/2 cup slaw and some chopped greens onions. Pull the tortilla over the mixture, pulling tightly towards you tucking as you roll. Roll tightly, and when you get to the end, place a small amount of blue cheese on the top edge of your tortilla, so it’s acts as a glue, to keep it wrapped tightly.
Slice the tortilla in half and then slice each half in half again. Slice each piece in half once more and this should leave you with 8 pinwheels.
These Buffalo Wing Pinwheels are perfect for your next meal before a big holiday get together. They’re crunchy, easy to make, tasty and are sure to be a crowd pleaser. I brought them to our Friends Thanksgiving as more of an appetizer, but just recently made them again and enjoyed them as a light lunch.
I have a house full of people coming over the day before Thanksgiving and I’ll be making these buffalo wing pinwheels for lunchtime. If you are anything like me, you do not like to cook meals and have leftovers clogging the fridge when you know, shortly Thanksgiving leftovers, will be consuming said fridge. I know not 1 pinwheel will be left in sight so these are just perfect!
Why worry about dipping your wings into a sauce when you can have the sauce rolled up into a pinwheel with the celery and carrots, too! It’s a win-win-win!

All your favorite flavors of a buffalo wing rolled up into one delicious, snack sized bite in these Buffalo Wing Pinwheels. Made with Morningstar Farms® Buffalo Wings and a blue cheese coleslaw, these are sure to be an all around favorite at your next get together!
Ingredients
- 1-10.5oz box Morningstar Farms® Buffalo Wings
- 6- burrito size tortillas
- 1 cup blue cheese crumbles
- 3 tablespoons buttermilk
- 1/3 cup Greek yogurt
- 1 clove of garlic, minced
- juice of 1/2 lemon
- pinch of salt and pepper
- 1/2 head purple cabbage, sliced thin
- 2 celery stalks, thinly sliced or grated
- 2 carrots, shredded
- 1 cup coleslaw mix
- 3 green onions, sliced
Instructions
- Preheat oven to 375 degrees and place wings on a baking sheet. Bake for 16-18 minutes.
- Cut each nugget into 8 pieces and set aside
- In a medium bowl, place your blue cheese, buttermilk, yogurt, lemon, garlic and salt and pepper and stir to combine. Set aside 1/2 cup to be used for later.
- To the dressing bowl, add in your cabbage, celery, carrot and coleslaw mix. Toss well.
- To assemble
- Place 1 tortilla on a flat surface and smear 1 tablespoon of dressing in the center of tortilla.
- Add approximately 20 pieces of buffalo wing to the top of dressing.
- Top with 1/2 cup coleslaw and 1 tablespoon of green onions.
- Starting at the side closest to you, fold your tortilla over your ingredients. Tuck in the flap and tightly roll until you get to the end. Place a dab of blue cheese dressing on the top edge of the tortilla, to use as glue, so the tortilla stays together.
- Cut the tortilla in half and then cut the halves in half again. Cut each half in half once more leaving you with 8 equal pieces.

This wasn’t the first time I have tried MorningStar Farms products from Target, but it was the first time I tried the Buffalo Wings. I am not surprised these wings are just as good as all the other products I’ve had from them. I love their Black Bean burger and in fact, just last night I used their Grillers Recipe Crumbles to make enchiladas! My family was none the wiser that they were eating vegetarian Mexican food!
