You guys, these cookies! I mean OMG! are they ever delicious. I would totally eat them alongside my cup of coffee in the morning for an extra jolt. Totally acceptable breakfast food. I am not judging, may have had a few myself this morning, it’s got coffee, right?! Now I don’t know about you but the first thing I think about when I wake up in the morning is coffee and how fast can I get it to my mouth. I’ve mentioned before, in this post, that I wish I had my own personal barista to deliver my coffee bedside, but have had no such luck in finding anyone interested in that job position. Any takers?
Anways, I digress, back to the cookies. There is something so magical about coffee and chocolate. If you add coffee to a chocolate cake, cupcakes or brownies, the chocolate flavor is immediately intensified. Coffee takes chocolate to a whole other level bringing out its richness. I learned this from Ina Garten back in the day and ever since that episode where she makes the Chocolate Cupcakes with the Peanut Butter Frosting, I’ve always added coffee, in some form, to my chocolate recipes. Try it, I promise you’ll notice a difference. Oh and definitely try Ina’s cupcake recipe, it’s to die for, after all we’re talking about Ina Garten here, she can do no wrong!
We’re huge fans of cookies around here, I mean isn’t everyone. There’s almost nothing better than a cookie sheet straight from the oven filled with piping hot chocolate chip cookies just waiting to be devoured. On my recent trip to Aldi, have I mentioned my love for that store? (Side note, if you have an Aldi, pay attention to their special buys and you’ll find the most interesting specialty foods at great prices!) Anyways, I was perusing the special buy aisle and noticed Fair Trade Espresso Morsels. I didn’t even have to think for a split second before they were in my cart. I love coffee! I could almost go as far to say it’s my addiction. I bleed coffee. Too far, maybe, but it runs in my veins and keeps me sane.
As soon as I got home, I pulled out Jim’s Grandmother’s recipe book and looked for her chocolate chip recipe. With a few tweaks, I came up with the softest, slightly crunchy Espresso Chocolate Chip Cookies. I swapped the espresso morsels for half the chocolate chips in the recipe and used chocolate chunks for the remaining. Folks, I’ve found my new go to Chocolate chip cookie recipe. They melted in your mouth. The combination of espresso, chocolate chips and buttery cookie was so delicious, I immediately ate 2. My husband, who loves coffee second to me, also loved them. This recipe will now be the base of all my chocolate chip cookie variations. I’m looking at you birthday cake cookies, I’m coming for you next.
The next day, I headed back to Aldi so I could stock my freezer with a few bags of espresso morsels and much to my dismay, there were all gone. It was heartbreaking. To further my horror, I cannot even find any on Amazon. Come on, I thought Amazon had everything. So Aldi Gods, if you are reading this, bring back the Fair Trade Espresso Morsels or email me and you can drop ship directly to my house, I’m happy to oblige.
So I know you are thinking why would you post a recipe where you can’t find the chips? Well, these cookies are equally delicious with chocolate covered espresso beans and those are readily available at your local grocery store or online. They still pack the same intense chocolate coffee flavor, if not more, with the bean being covered in additional chocolate. And you can’t go wrong when you pair coffee and chocolate! King Arthur also sells Cappuccino chips that I have yet to try but would also taste great here too. I mean you really can’t go wrong with any combination of coffee and chocolate!
Espresso Chocolate Chip Cookies

Soft, chewy, a little crunchy on the outside, buttery and sweet, these Espresso Chocolate Chip Cookies combine two of the best flavor combos, coffee and chocolate.
Ingredients
- 1 cup butter, slightly melted
- 3/4 cup sugar
- 1/2 brown sugar
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 ounces chocolate chunks
- 8 ounces espresso morsels or chocolate covered espresso beans
Instructions
- Preheat oven to 375 degrees
- Slightly melt butter in microwave for 30 seconds
- In the bowl of your stand mixer, combine butter and sugars until creamy.
- Add vanilla and eggs, one at a time. Mix until all combined
- In a separate bowl, whisk together dry ingredients (flour, salt and baking soda)
- Gradually add dry ingredients to bowl of stand mixer. Mix until incorporate.
- Fold in chocolate chips and chocolate chunks
- Drop by Tablespoons onto Silpat or parchment lined cookie sheet
- Bake for 9-11 minutes. Do not over bake

*I baked my cookies for 9 minutes and they were perfect. Do not over bake

These cookies are magical. I plan to use this base recipe for the rest of my life. The cookies were even better the second day and tasted great dunked into a big glass of milk coffee.
