Whew, January’s gone, how did that happen to fast? I feel like I am still recovering from Christmas break!

I was doing so well on my journey to a healthy lifestyle, working out daily, conscience about the food I was eating, actually eating breakfast. I mean I was on a mission. We recently spent the weekend in Wisconsin Dells and this lady had to get into a bathing suit and it had been since well, August! Yikes!
Weeks leading up to the trip were great. The trip was much-needed and quality family time was had by all. I felt great about myself (I rocked those swimsuits) and then we got home.
Healthy lifestyle be damned. I think I consumed all the food I had missed eating for weeks, in about 3 days time.
Now I’m back to feeling like garbage. But its not too late. Nope, it’s February 1st and I’m hopping back on that resolution train and I’m riding it out!
When I eat breakfast, work out and really stick to foods that are good and good for me, I feel like such an incredible person inside and out. Therefore, I’m starting today and first thing this morning I enjoyed this Mocha Coconut Java Carnation Breakfast Shake.
Eating a nutritious breakfast in the morning is so beneficial to your whole day.
If fuels you up, jump starts your metabolism and really propels you to strive the whole day through. I decided that today would be a great day to really start enjoying breakfast again. You see, I am not a breakfast person. I’m a 2 cup of coffee gal and then lunch. But when lunch time rolls around, I’m a hungry bear and hit the kitchen starving. Then it leads to poor choices… and a nap.
So, I decided to start the 7-Day Breakfast Challenge by Carnation Breakfast Essentials®.
It encourages everyone to get into a breakfast routine or if you are like me, eat breakfast at all. This past weekend, I headed to Kroger to check out Carnation Breakfast Essentials®. I decided to purchase the Rich Milk Chocolate as what can I say, I love chocolate and for breakfast-SOLD!
Also, I figured with purchasing the chocolate variety, I could add espresso powder to my shake so it would give me an extra jolt. You see, I need all the jolt I can get in the morning as my typical morning starts like this. Son enters room at 6:30 am begging for me to get out of bed.
I stumble out of bed, brush my teeth, get him breakfast, pack his lunch and sometime in there fire up the coffee pot and pour myself a cup.
Then my daughter wakes up and needs breakfast. Then it’s onto getting everyone dressed, their teeth brushed, necessary items for school and then out the door to drop them off at 2 different schools.
Whoops, looks like mom skipped breakfast again. By the time I have dropped them off, ran my errands (because as a mom errands, alone, is precious time) picked my daughter from preschool and then get home, it’s lunch time. So I have zero time in the morning to cook myself a nutritious meal.
What I do have time for is gathering all the ingredients I need to make this Mocha Coconut Java Carnation Breakfast Shake, the night before, and throwing them all into the blender in the morning. With Carnation Breakfast Essentials® they are ready to go packs and each pack has 13 grams of protein, 21 vitamins and minerals and 2x the calcium of a 6oz cup of yogurt. So while I was shopping at Kroger, I picked up a 6 pack of French Vanilla so I could grab a bottle when I’m running out the door, if my sleepy self has forgotten to gather the shake ingredients the night before, which I most certainly will.

In a blender, combine 1 cup of coconut milk beverage, 2 containers of 5.3oz of coconut yogurt, coconut extract, espresso powder, 1 packet of rich milk chocolate Carnation Breakfast Essentials®. Blend and pour into a glass or to go container. Also, if you’ve got a tad extra time, topped with unsweetened coconut flakes and no calorie chocolate syrup. Yes, it’s really THAT simple.

Ingredients
- 1 packet of Rich Milk Chocolate Carnation Breakfast Essentials®
- 1 cup Coconut Milk Beverage
- 2 containers- 5.3 ounces coconut Greek yogurt
- 1/2 teaspoon coconut extract
- 2 teaspoons espresso powder
- 3 cups ice
Instructions
- Add all ingredients to blender, starting with the liquids.
- Blend until well combined
- Optional- Top with unsweetened coconut flakes, no calorie chocolate syrup, light whipped cream

Just look at that creamy, dreamy Mocha Coconut Java Carnation Breakfast Shake. Yummy! I am such a fan of chocolate and coconut and with the addition of espresso, it really is the breakfast way to start my day!
I’ve already packed my purse for tomorrow. I figure if I’m out and about and remember I forgot to eat breakfast, I’ll stop into a coffee shop or gas station, grab a bottle of single serving milk and add my powder or open my single serve Carnation Breakfast Essentials® Ready-to-Drink Bottle. This is one challenge I’m completing on my journey to a new, more nutritious me!
