The classic shake you know and love, The Shamrock Shake, turned popsicle. Cool, creamy mint flavored frozen yogurt popsicles complete with whipped cream and a cherry on top!
Oh the beloved Shamrock Shake, how I love thee…let me count the ways. All I’ve got to do is look into the mirror and see it went straight to my butt and thighs. But God love those things. I limit myself to 1, yes just one, of them every year because to be honest, the sugar content is outta this World. Yes, I am one of those people who checks the nutritional label on everything. I even read the menu and peruse the nutrition facts on restaurant food days before I get to the table. “Do you need a menu? Nah, I’m good, I figured out what I was having on Tuesday.” But as I always say, don’t deprive yourself. Everything in moderation is just fine and actually good for you.
Around this time last year I had this crazy idea to start a food blog. 3 months later, I started one. And now here we are 9.5 months in and I’m enjoying every bit of it. In most everything I do, I research and practice and perfect every last detail of something until I’m happy with the results and then jump to publish said project. And that’s what I did with my food photography and this little ole blog. Now, I’ve got a LONG way to go in the photography department and definitely haven’t mastered that, but last March I start making St. Patrick’s Day treats and practiced photographing food with them. That’s when I thought of these Shamrock Shake Popsicles. And lemme tell ya, Google ’em, I’m the FIRST to come up with them. Do you hear that? There are no other Shamrock Shake Popsicles on Google…and people, that’s a first.
Whenever I think I have this brainiac idea I head to Google and am always proved wrong. Someone has always beat me to it, which is crazy because in the World of food, which is ever evolving, you would think people come up with genius food concoctions all the time. Apparently I am not one of them, until now. Mwwaaahhhh (that’s my evil laugh) No, really though. I’m pretty excited about these popsicles. I made them last year as well as Lucky Charm treats (no recipe here, Google ’em, you’ll find plenty) and was delighted with the results.
I decided to keep the sugar in check and used fat-free, no sugar added frozen vanilla yogurt. I also used nonfat milk. Now, let me preface this with, I was also indulging in these treats and not just my kids. If I were making them strictly for my kids, I don’t mind using vanilla ice cream or regular full fat frozen yogurt and 2% milk. But again, because I was also eating them, I wanted to lighten them up so we could all enjoy. Please feel free to use whatever type of vanilla frozen treat you love and prefer as well as your milk preference. These can be adapted to suit anyone’s needs.

These Shamrock Shake Popsicles are creamy and delicious and really made me feel like I was sipping on a Shake from the golden arches. We truly enjoyed them. Now, I’m a BIG fan of mint, always have been and I’ve passed that love onto my son. Mint Chocolate ice cream every day of the week. I could have used mint chocolate ice cream but I really wanted these to resemble a Shamrock Shake and didn’t want flecks of chocolate in them. I flavored this popsicles with peppermint extract and a little goes a long way.
This concludes the St. Patrick’s Day recipes for me this year but be sure to check out this recipes for all your Shamrock loving hearts
Enjoy and if you make this recipe, please share a photo on social media and hashtag it #strawberryblondiekitchen I love to see what you cook up!
