Today is day 2 of Peach week and I’m going to start off with a confession. I had this pizza in mind for a very long time. I decided it was finally time to make it, so I ran out, purchased all the ingredients, fired up the grill and go to work. Only until I was editing the pictures did I realize I used basil, fresh from my garden, and not the arugula I had purchased. ? Nonetheless, this pizza is divine but I can’t stop dreaming about how it would be with delicious, peppery arugula. So, there is my confession and until I decide to grill again on a 99° day, the Grilled Peach, Prosciutto and Goat Cheese Pizza with arugula will have to wait.
Here we are into the full swing of HUMIDITY. Lord help us all. We returned from 10 days in Wyoming, where the weather was in the 90’s, but completely bearable to be outside AND with no air conditioning. Yes, there is a window unit, but the house isn’t stifling hot so we just don’t turn it on unless necessary and this week we did not. As soon as we hit the Iowa border, I was engulfed in this hot, sticky, take your breath away in a choking kind of matter and immediately returned to the air conditioned car. Gross. I forgot all about the humidity and how disgusting it can be. This ecard sums up just how I feel about humidity with a few profanities thrown in.
So here I am the other day in 99° weather with a humidity index of 89% sweating over a hot grill all in the name of this beauty. #worthit
One of my favorite things is the grill, another reason why I love the summer because this girl is not going on in the snow to grill up some food. i also really enjoy consuming food that’s been cooked on a grill. BBQ food is right up there with Mexican food in my book and I’ll never turn down a slab of ribs.
Besides the fact I almost burned down our house the very first year we lived here and the neighbors literally had to come and put the fire out, I have gotten pretty good at using the grill. We now have a charcoal grill which I think is easier to use, but it’s really the opposite isn’t it? I dunno, but I really love the charcoal grill.
My husband is also the proud new owner of a smoker, which his lovely wife gifted him herself for his birthday. No, I haven’t touched that thing yet. I’ll let him be the pit master for awhile and then I’ll throw some fish in there. Mmm…smoked fish. Hubs is cursing under his breath right now and murmuring, yeah right, let’s see if you ever put fish in my smoker…we’ll see about that.
Anyhow, I love grilled pizza. We recently went to the new Blaze Pizza in town and it was amaze balls. I loved that I could pick from a variety of ingredients, sauces and herbs to throw on my pie and it was hot and ready within 3 minutes. It was also very reasonable, so my husband and I each got our own pie, therefore, I was able to load mine with all the artichokes, pesto and olives my little heart desired. Do you guys have a Blaze near you?
Anyways, after we ate dinner, I couldn’t wait to go home and grill up my own pizza. Not that night of course, I brought a doggie box home of all the pizza I couldn’t finish but I was excited for the next grilled pizza to come into my life. Insert Grilled Peach, Prosciutto and Goat Cheese Pizza.
I waited until my husband was out for the night as he would certainly turn up his nose at this pizza, oh well, more for me. This Grilled Peach, Prosciutto and Goat Cheese Pizza comes together in about 10 minutes as there’s no real cooking involved. I made some char marks on the naan and grilled the peaches and that only took 5 minutes. The longest part was waiting for the coals to get home.
Once the naan and peaches came off the grill, I slathered on softened goat cheese, put on the peaches, prosciutto, basil and drizzled the top with this amazing white strawberry peach balsamic my uncles wife Ann gifted me with. The combination of sweet peaches with salty prosciutto, tangy goat cheese and slightly peppery basil is so on point ? Again, I think with arugula it would have been just as good, if not better. I’m a huge fan of basil and arugula so I was happy either way. In the near future, I will be trying it with arugula and will report back.

Tender and sweet peaches are a match made in Heaven with salty prosciutto, tangy, creamy goat cheese all piled high on garlic naan bread. This Grilled Peach, Prosciutto and Goat Cheese Pizza will have your taste buds singing the sweet and savory tunes of summer.
Ingredients
- 1 package Naan bread (I used garlic and came in a 2 pack)
- 2 peaches, sliced
- 2 ounces goat cheese, softened
- 2 ounces prosciutto
- handful of fresh basil or arugula
- balsamic, optional.
Instructions
- Preheat grill and place naan on side of the grill with the coals. Grill naan bread for 30 seconds on each side keep a close eye, it will burn quickly.
- On the indirect side (side without coals) places the sliced peaches and grill until visible char marks.
- To prepare pizza, spread 1 ounce of goat cheese on each piece of Naan.
- Top each with an equal amount of peaches
- In between the peaches, weave 1 ounce of prosciutto onto each piece of Naan bread and lightly press into the goat cheese.
- Scatter on some basil and drizzle with balsamic, optional.
- Cut each Naan into 4 portions.

Next time there is a break in the heat wave, or if you don’t mind sweating a little on your food (ew) go outside and grill up some pizzas. I’m also a huge fan of a classic margherita pizza but this Grilled Peach, Prosciutto and Goat Cheese Pizza may slide into first.

I’ve been all about peaches and prosciutto this summer! And I’m jealous of your grilling skills ( now that you know how to not burn down the house, lol ). I love the flavor of charcoal grilling but have no talent for it.
