There it goes. Summer that is. School supplies have been purchased and labeled, cabinets have been stocked with lunch items and bedtime routines have begun. It’s full swing back into school around here and I still can’t say I’m ready. I can’t say either are they.
How is my son in 1st grade and my daughter in her last year of preschool? How did this happen? When did this happen? It’s always so bittersweet.
Every year, on the first day of school, I ask my kids what they want to be when they grow up. My son has answered paleontologist since the time he was 3 and I expect nothing else from him next week. As for my daughter, she answers some sort of princess; Ariel, Elsa or just “princess.” I can’t wait to see what she says this year. Their creativity never ceases to amaze me and only gets better with age. I can sit quietly in another room and listen to them for hours chatting about how the triceratops needs to free the princess from the volcano. This is true life.
In my office, there is no shortage of pictures on the wall. At one time I was going to create a gallery wall with pictures, art and wall hangings I’ve picked up through the years but my children’s art makes me smile more than anything I could ever buy in the store. So thanks to my kids, I have a personalized gallery art wall and each picture brings back a different memory. That one all the way to the left? Yeah, it’s what started it all. It’s me and him, under the Christmas tree. When he handed it to me and explained what it was, my heart exploded into a million tiny pieces. #bestillmyheart
My son has been drawing for as long as I can remember and I cannot keep enough art supplies on hand to keep up with the demand. My daughter has also recently become interested in coloring, so now I have more pictures to hang on my office well. So, every time it’s “Back to School” in the stores, I stock up on as many Crayola products as I can to stash in the art box. They’re super cheap, WASHABLE, and the best quality you can get, so Back to School + Crayola is the way to go!
My son and I headed to Target this year for our annual Back to School Date night, checked everything off our list and then headed to the grocery section to pick up some snacks and lunch items. We headed to the freezer aisle to stock up on waffles, which my son has also loved since he could speak, requesting a “waff” every morning since he could speak. Therefore, I needed to stock the freezer to prepare for the busy mornings ahead. I was super excited to see that you could earn $5 off Crayola products with the purchase of 3 specially marked products from Eggo. Also, if you head to Target.com you can download this super fun activity booklet packed with a variety of fun activities that my kids couldn’t stop completing, coloring, doodling. It’s super fun and so cute! IT really kept their attention and kept them engaged with one another, it was awesome!
I also love that I can fuel their minds and body at the same time, thanks to Eggo and Crayola. I can whip him and his sister up a delicious Bacon, Havarti and Peach Wafflewiches while they are coloring on their activity book, doing homework or needing something tasty for an afternoon snack. Eggo Waffles aren’t meant for just breakfast. They make delicious sandwiches, desserts and kebabs. We love to spread peanut butter and apple slices on the cinnamon brown sugar ones. Try it some time, it’s SO good!
The next day after our date, it was raining outside, the kids were getting restless because it was lunch time and I was ready for a nap. I decided to make Bacon, Havarti and Peach Wafflewiches because that is what I had on hand and remembered seeing on the Eggo box about downloading the activity booklet. I ran to my computer, printed each kid out a booklet, handed them some Crayola crayons and markers and they went to town on that booklet while I made them waffwiches. Bingo. I now had the perfect combo for back to school afternoons. I’ll keep them busy and fed with Bacon, Havarti and Peach Wafflewiches + coloring while I prepare dinner.
These Bacon, Havarti and Peach Wafflewiches truly could not be more simple. I took the 2 Buttermilk Eggo Waffles, put a piece of havarti cheese on each waffle, topped each piece of cheese with 1 tablespoon of peach jam and added 2 slices of bacon to each. I then sandwiched them together and placed them into the panini press until the cheese was oozing out.
There is no better combination in this world than crispy salty bacon, buttery and creamy Havarti cheese, sweet, juicy peaches and a thick, delicious Eggo waffle to hold it all together. These sandwich is wonderful! I saw the kids enjoying it so much that I had to make one for myself and you will too!
Bacon, Havarti and Peach Wafflewiches

Yield 5 sandwiches
Crispy bacon, buttery havarti and sweet peaches come together to create the ultimate wafflewich that kids and parents alike, can't resist! These Bacon, Havarti and Peach Wafflewiches come together in a snap and are perfect anytime of the day.
Ingredients
- 1 box Eggo Waffles (I used Buttermilk)
- 10 slices Havarti cheese
- 10 slices bacon, cooked
- 5 tablespoons peach jam
Instructions
- Place waffles in toaster and toast to defrost or place them in the microwave for 30 seconds.
- Place 1 slice of cheese on each waffle
- Place 1/2 tablespoon of peach jam on each waffle and spread out.
- On 5 of the waffles, place 2 slices of bacon on top of peach jam.
- Top with the other half of the waffle making a sandiwch
- Preheat a panini press and press waffle sandwiches until cheese is melted and gooey
- Cut in half or into triangles and serve with extra peach jam

One afternoon while the kids were coloring and I was preparing these Bacon, Havarti and Peach Wafflewiches I thought it would be fun to make them into kebabs with grapes and strawberries. The kids loved them! Got some extra bonus points for being a cool mom!
