Fall foods are in the house people and now that the weather is chillier there is no stopping me. It also helps that spices such as cinnamon, nutmeg and cardamom warm me to my core because PEOPLE, I turned my seat warmers on today! ? I am a baby when it comes to cold weather, so let’s just get that out-of-the-way, but I’ve been freezing all day today. It should be totally understandable though. The weather on Monday was 88…today it’s 62. Talk about a weather shock and I am NOT ready for it.
First thing is first, I need to go shopping and not just for me, for the kids. I was going to put off “cold weather shopping” until our return home from a warm vacation next week but I’m not sure this can wait. I need to hit up Carter’s, Shoe Carnival and Kohls STAT. Which to be honest, gets me really excited because I love nothing more than shopping for my kids. They have more clothes than me. For my daughter, she can still rock those adorable matchy matchy outfits from Carter’s so I’m all over that store dropping hundreds like it’s nobody’s business and for my son, dinosaurs. Any thing and everything that has a dinosaur on it-done. So easy. I feel the day I have to walk, be dragged around from store to store, to get the latest and greatest fashions so they can “fit in” with the cool kids.
Speaking of my son, he is in LOVE with this Apple Pie Pull Apart Bread. That boy could eat bread all day long. He also loves the Brown Sugar Stuffed Banana Bread and the Chocolate Chunk Zucchini bread so it’s a no wonder how much he devoured this bread. And I let him because, well, beach vacation next week. I’ve got about a week to achieve that beach body ??. But after that, it’s all down hill from there because one word- sweaters.
I recently started back at the gym again and can I tell you? I missed that place. I forgot how much I love going. Now I pencil in my 1 hour gym session daily. I get it out-of-the-way, first thing in the morning and it keep me going and on track all day long. Ask my about this in a month and I’ll tell you if I’m still with it. I always forget how good it makes me feel so I’ll just have to go back and reread this post when I’m feeling sluggish and too cold to move.
I made this Apple Pie Pull Apart Bread because I went a little apple crazy at the grocery store the other day. then I scoured through my magazines wondering what in the World I was going to do with all of these apples besides make a pie. I am not a pie girl. Knowing my son likes bread I decided to make this pull apart bread I happened upon.
The smell of the bread baking is reminiscent of an apple pie. Warm, toasty and perfectly cinnamony (is that a word?) Basically, it smells like Heaven. And then you take it to another level with a cream cheese drizzle. Oh yeah, we went there and it’s SO good. It’s called a pull apart bread and you can see the little folds where you can pull it apart. I sliced a few pieces of my son and then I pulled a few parts for myself because after all, I had to make sure it was good enough for you guys. Verdict- it is.
You can see the little pockets of apples and cinnamon and that ooey gooey drizzle compliments them so well. It’s full of Fall flavors and the perfect bread to wake up to in the morning. I think this Apple Pie Pull Apart Bread would also be good with some pecans or some walnuts sprinkled in because I like a little bit of nutty flavor when it comes to apples. So, the next time I make this bread, I’m going to give that a try to will report back with the results. In the meantime, get yourself to the grocery store and purchase one too many apples and make this bread. You won’t regret it, I can promise you that.
Apple Pie Pull Apart Bread

A quick layered bread filled with chopped apples, cinnamon, brown sugar and drizzled with a cream cheese glaze. Sure to give Apple Pie a run for its money!
Ingredients
- 3/4 cup milk
- 1 package active dry yeast
- 1 egg, lightly beaten
- 1/4 cup butter, melted
- 2 tablespoons, sugar
- 1/2 teaspoon salt
- 3 cups all purpose flour
- 1/4 cup butter, melted
- 2/3 cup packed brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon, nutmeg
- 1/2 teaspoon, allspice
- 1/4 teaspoon, cloves
- 1/4 teaspoon cardamom
- 1 1/2 cups apples, finely chopped (about 3 apples)
- Cream Cheese Glaze
- 2 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk
Instructions
- In a small saucepan, heat milk until warm (105-115°F)
- In a large bowl, place active dry yeast and pour milk over the top. Whisk until yeast is dissolved and let sit for 10 minutes
- Add egg, melted butter, sugar and salt to the yeast bowl. Mix until combined.
- Add in 1 ½ cups of flour, beat until combined, scraping down the bowl as needed. Stir in the remaining flour and mix until incorporated.
- Shape dough into a ball and place into greased bowl, turning to coat the ball.
- Cover and let rise, in a warm place, until almost double in size. (I place a heating pad on the low setting and place my bowl on top)
- Grease a 9x5 inch loaf pan.
- Combine brown sugar, cinnamon, nutmeg, allspice, cloves and cardamom in a small bowl
- Turn dough out onto floured surface and roll out into a 20x12 inch rectangle.
- Brush with ¼ cup melted butter and sprinkle on spice mixture followed by the apples, pressing down as you go so they stick to the dough, as much as possible.
- Cut the rectangle in half, lengthwise to make 2 (20x6 inch pieces) and then cut each piece crosswise into 5 (6x4 strips)
- Carefully make two stacks of 5 strips and then cut each stack into 4x2 inch pieces.
- Stagger the stacks in the prepared pan, cut sides up.
- Cover and let rise in a warm place until almost double in size.
- Preheat oven to 350°and bake 40-45 or until golden brown and cooked in the center.
- Allow to cool completely in the pan. Remove loaf just before serving and drizzle with cream cheese glaze.
- Cream Cheese Glaze
- In the bowl of a stand mixer, beat cream cheese and powdered sugar with 1 teaspoon of vanilla extract. Start with 2 tablespoons of milk until desired drizzling consistency is reached.
