My favorite month is here, October! I love the Fall colors, the crispness in the air, apples, pumpkins, you name it, I’m all about it. And I LOVE Halloween! My love for Halloween grows more and more the older I get. My mother use to decorate the house to the nines and I’ll never forget it. My mother is always good at decorating and because of her, I found my love to decorate my own home for the holidays.
My kids already have their costumes. I was on the ball this year. Mainly, because Target had a 40% off, one day only sale, so I drove as fast as I could as they had only 1 of each of my kids costumes. I probably looked like a crazy person, crazier than most days anyways, tearing through that store. I had one goal. Secure costumes for both kids. Mission accomplished. I also wanted to purchase them before we went on vacation as I’m sure they’d be gone by the time we got back.
The only thing I don’t do for Halloween, dress up myself. That hurrah ended in college and it’ll stay there.
Over the weekend, it was just my daughter and I, as my husband took my son out for an afternoon of running “manly” errands. While the boys were gone, the girls got to work hanging all our Halloween decorations over the house. As my love grows year after year, so does my storage boxes of Halloween goodies. I think it’s just time for a new house, so I can finally have a second Christmas tree my husband has been putting off for years. It’ll happen honey, believe me.
So after the house was all decorated and we were relaxing on the couch, our bellies got to grumbling. Since I was in a Halloween mood I was wondering what I could make that would satisfy us both, be ready in minutes and also be festive. I had just recently purchased some Farm Rich® frozen snack foods from Walmart; breaded mushrooms and chicken bites buffalo and there was no better time than now to cook the mushrooms as the boys aren’t fond of them.
I didn’t want to just serve the mushrooms as is, so I pulled out a jar of my favorite marinara sauce, pour it into a cast iron skillet and then remembered the classic dish, eggs in purgatory. My daughter and I love eggs, so this would be perfect. We’d have a balanced lunch, just her and I could enjoy.
I had to idea to make a little cut into the top of the mushrooms and place a sliced black olive in the center. I also had just purchased eyeball candies for an upcoming recipe and thought I’d place those inside to make them really look like eyeballs. And if you’re like my son, who exclaimed, “candy and savory foods, that’s weird.” My daughter loved it and you can pick off the eye candy if you’re weirded out too.
Halloween Eyeball Skillet couldn’t be a simpler meal. From start to finish this took 20 minutes. While the eggs were baking in the oven, alongside the mushrooms, I assembled the “eyeball” parts. I placed the eyeball candy into the sliced black olives and when the mushrooms were out of the oven and cool to the touch, popped them right in and then placed them alongside the eggs in the pan. Then it was time to dig in!
My daughter had no idea what I was doing in the kitchen and the look on her face when I served the Halloween Eyeball Skillet was priceless. It went from disgusted to “oh my goodness mom, what have you done delight fullness.” And it was super tasty and we goggled it right up.

Eggs are baked in a tomato sauce and then breaded mushrooms with sliced black olives, made to looks like eyes, are nestled alongside to create this Halloween Eyeball Skillet. A festive meal sure to please the entire family!
Ingredients
- 1 package Farm Rich® Mushrooms
- 4 eggs
- 23 oz jar marinara or spaghetti sauce
- 8-12 sliced black olives
- 8-12 candy eyeball pieces
Instructions
- Preheat oven to 450° F
- Arrange mushrooms onto baking sheet
- Place your favorite marinara or spaghetti sauce into a cast iron skillet.
- Make 4 wells in the sauce and carefully crack an egg into each.
- Place both the mushrooms and eggs into the oven and bake for 13-14 minutes
- While the mushrooms and eggs are cooking, lay out as many black olive slices as you have prepared mushrooms.
- Into each slice black olive, place 1 candy eyeball.
- When the mushrooms come out of the oven and are cool to the touch, carefully remove a little piece of breading and place "eyeball" into each center.
- Arrange mushroom "eyeballs" around eggs.
This Halloween Eyeball Skillet is SO delicious. I mean who doesn’t like breaded mushrooms, dipped into marinara sauce and with a runny egg yolk? We all know things are better with an egg, so you’ve gotta try this delicious and festive meal for your kids and family. And if they don’t like mushrooms, you could easily use Farm Rich®’s jalapeno poppers, mozzarella sticks (cut in half and make them like ghosts) cheddar cheese curds or crispy dill pickles (I’m buying these next time!).
