I am SO ready for the dog days of summer, aren’t you? Long days lounging by the pool, soaking up the rays and not worrying about your alarm clock going off so you can rush the kids off to school. There’s only 13 more days left of school, but who’s counting. #guilty
There is just something about summer that puts me in a good mood. I love taking quick day trips to the beach. I am a water sign and belong by the water. Nothing makes me happier than sticking my feet in the sand and helping the kids build sandcastles. And besides the water, nothing cools us down better than ice cream.
I love to find any excuse to eat copious amounts of ice cream in the summertime. And better yet if that ice cream is low fat, taste delicious and has powerful nutrition. Sounds like a dream doesn’t it? Well, it’s not. Welcome to reality and say Hello to ProYo High Protein Low Fat Ice Cream. I teased you guys about this on my Instagram feed last week.
ProYo is a High Protein Low Fat Ice Cream and it’s absolutely fabulous! It is available in 7 different flavors to satisfy any kind of sweet tooth. It has quickly won my heart over other leading protein ice creams and I plan to stock my freezer with it all season year long.
While at Kroger, I picked up 4 varieties. I took advantage of a Buy 1, Get 1 free deal (link is at the bottom of this post so you can too!) so how could I not?! I picked up Coconut, Mint Chip, Dark Chocolate Toffee and Blueberry Pomegranate.
As soon as I got home, I tried every.single.one. I couldn’t believe how creamy, yet low fat they were. Plus, the high protein content they pack into one servings- 10 grams!
And the taste? It’s delightful! Now this is an ice cream I can feel good about feeding the whole family. Say goodbye to sugar loaded treats. My kids will be snacking on ProYo High Protein Low Fat Ice Cream for their after dinner dessert and I’ll be indulging after my night time workout sessions.
I love to twist up my kid’s usual snacks. We love to eat ProYo High Protein Low Fat Ice Cream straight from a bowl but this afternoon I thought I would treat my kids to something else. Piña Colada Ice Cream Bites. Talk about the perfect summertime treat!
Both of my kids, as well as myself, love coconut so Piña Colada Ice Cream Bites sounded like a great dessert and they couldn’t have been easier to put together.
I started by making an almond coconut crust. It’s sliced almonds, unsweetened coconut flakes, coconut oil and a little flour. Pulse until fine crumbs and place into parchment papers lined into a muffin tin. Bake for 10 minutes and allow to cool. While the crusts are baking, puree fresh pineapple until no visible chunks. When the crust is cool, pour pineapple puree on top and freeze for 2 hours. Once frozen, top with Coconut ProYo High Protein Low Fat Ice Cream and allow to freeze 4 more hours.
One they are done, pop them out and top with whipped cream and cherry to really complete the Piña Colada vibe. My kids absolutely loved these Piña Colada Ice Cream Bites. I was over the moon with how wonderful they turned out!
Piña Colada Ice Cream Bites

Yield 6 ice cream bites
Piña Colada Ice Cream Bites are the perfect treat to cool down this summer. Layers of coconut crust, pureed pineapple and Coconut ProYo High Protein Low Fat Ice Cream make these your new summertime dessert.
Ingredients
Layer 1
- 1/3 cup sliced almonds, toasted*
- 1/2 cup unsweetened coconut flakes
- 1/4 cup whole wheat flour
- 2 Tablespoons coconut oil
- 2 teaspoons honey
Layer 2
- 1 cup fresh pineapple chunks
Layer 3
- 3/4 cup Coconut ProYo High Protein Low Fat Ice Cream, softened
- Whipped cream, cherry
Instructions
Layer 1
- Preheat oven to 350 degrees
- Line a muffin tin with 6 parchment paper liners. Set aside.
- In a food processor, place all ingredients for Layer 1 and process until fine crumbs form.
- Place 1 tablespoon + 1 teaspoon mixture into each well and press down.
- Bake for 10 minutes or until golden brown. Allow to cool.
Layer 2
- Place 1 cup pineapple chunks into food processor and process until smooth.
- Place 1 tablespoon puree on top of baked crusts. Freeze for 2 hours.
Layer 3
- Place 2 tablespoons softened Coconut ProYo High Protein Low Fat Ice Creamon top of pineapple puree layer and smooth out. Freeze for 4 hours or until firm.
- Take off paper liner and top with whipped cream and a cherry if desired.
Notes
*to toast almonds place into small skillet set over low heat and stir frequently until fragrant, about 3-4 minutes.
