There was no way to avoid it. It happened. My baby started her first day of kindergarten today. She was ready but I’m still not ready to let go.
I am super excited for all the amazing things she will experience in kindergarten but I lost my shopping buddy, sous chef and lunch date. If you need me today, you can find me in my bedroom, drowning my sorrows in a huge plate of these banana split pancakes.
I swear I blinked and now I have two school aged children. To be honest, I’ve been dreading this day for a long time. My house is about to be quiet all day long and I’m not sure how to take it.
On one hand, I can get work done for a solid 6 hours with no interruptions. Then on the other hand, I’m going to miss making lunches and wondering what they are doing during their lunch, who are they sitting with and did they like what I packed them?
I decided to make the first breakfast of their new school year a memorable one. We are no stranger to Sir Bananas® Chocolate Bananamilk as we first experienced it when I made these banana split popsicles.
My kids fell in love with both the original Bananamilk and the Chocolate Bananamilk. Now it’s a staple whenever we go to Wal-Mart.
I love to sub Bananamilk in baked goods, for regular milk. I use it as a 1:1 ratio and it works out perfectly every time. It’s just what I did here with these banana split pancakes.
I took a recipe I use all the time and sub in Bananamilk. The banana flavor that comes through is delicious and my kids love it and I love it for all the nutrients.
Sir Bananas® Bananamilk is Made with real bananas, has 7 grams of Protein with No artificial flavors, sweeteners or colors. It’s also gluten-free and contains no high-fructose corn syrup. Now that’s something I feel good about serving to my kids!
For these banana split pancakes, I didn’t want to send me kids to school with a sugar high, so I started with my whole wheat pancake base. once all the pancakes were cooked, I placed strawberries and a little sugar-free chocolate syrup and whipped topping on them. I also chopped up a few peanuts so it really looked as though it was an ice cream sundae.
They devoured them and off to school they went. I’ve added these pancakes into the permanent rotation and plan to make them for dinner next week too. They also freeze really well so you can wrap them up, place them into a freezer bag and just pull them out as needed. Make a batch on Sunday and have your kids enjoy them all week-long.

Ingredients
- 1/2 cup all purpose flour
- 1/2 whole wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1/2 tablespoon vanilla extract
- 2 cups Sir Bananas® Bananamilk
- 2 tablespoons baking Stevia
- 3 bananas, sliced into 16 slices
- Desired toppings: diced strawberries, sugar free chocolate syrup, sugar free whipped topping, chopped peanuts, maple syrup, etc.
Instructions
- Into a medium bowl, combine flours, through salt and set aside.
- In another bowl, combine eggs through stevia.
- Make a well into the dry ingredients and pour in wet batter.
- Stir until just combined (over mixing will result in tough pancakes. Lumps are ok!)
- Preheat a griddle and spray with cooking spray.
- For each pancake, place 1/4 cup batter onto hot griddle. Place 4 slices of bananas onto each. When bubbles start to form, flip over and cook for an additional minute.
- For serving: Place 2 pancakes onto a place and top with desired toppings. We used diced strawberries, sugar free chocolate syrup, sugar free whipped topping and chopped peanuts to make authentic banana split pancakes.
