It’s the first day of Fall and the weather was 92 degrees today! Apparently Mother Nature missed the memo. I’m not complaining though. Before we know it, there will be 6 inches of snow on the ground and I’ll be begging for warm weather again.
So while it was 90 degrees+ outside today, I was in the air conditioning whipping up these Pumpkin Spice S’mores Bars and promptly shoving them into my mouth.
AMAZING doesn’t even come close to what these are. Usually when I make something I expect it to be good. But this good? Holy cow. If you love pumpkin spice I highly recommend you run out and grab a box of S’mores cereal ASAP
We discovered this S’mores cereal this summer when we were in Wyoming. My aunt had bought a box for the kids and it was gone within 2 hours. It wasn’t just the kids! The adults kept taking handfuls and just eating it right out of the box. This cereal is that good.
I don’t make a lot of pumpkin spice things, well until this year. Not because I don’t like the flavor but because my husband isn’t a huge fan. I burned him out on it about 4 years ago. So far this year, I’ve made at least 4 recipes and they’re coming atcha soon-promise!
I’ve also gotten wise and send the leftovers to my husband’s coworkers, neighbors and our Moose lodge. Whoever will take the extras from me, come and get them! I’m leaving for the Bahamas in 47 days and these don’t exactly fit into my 6 week lifestyle {swimsuit} change.
I also recently read if you are trying to stay on top of your diet but you just have to have a bite of these Pumpkin Spice S’mores Bars or that carrot cake sitting in the break room, to just limit yourself to 3 bites. That’s all it takes to feel satiated and then you aren’t overindulging.
I wasn’t able to hold myself to 3 bites of these Pumpkin Spice S’mores Bars and you won’t be able to either. The combination of honey maid golden grahams, mini marshmallows, chocolate pieces and pumpkin pie spice is truly a match made in pumpkin Heaven.

Pumpkin Spice S'mores Bars

The classic crispy treat you love, turned into a Fall favorite. These Pumpkin Spice S'mores Bars combine S’mores cereal, warm pumpkin spice seasoning and a delightful drizzle of chocolate and mini marshmallows.
Ingredients
- 4 tablespoons butter, unsalted
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1-10oz bag marshmallows
- 6 cups Post S'mores cereal
- 1/4 cup Wilton Orange Candy Melts
- 1/4 cup Jet-Puffed Mallow Bits
Instructions
- Place parchment paper into the bottom of a 13x9 dish and spray with cooking spray. Set aside.
- In a large pot, melt butter.
- When butter is melted, add in vanilla and pumpkin pie spice and stir to combine.
- Add in marshmallows and cook on medium low heat until melted.
- Turn off heat and add S'mores cereal.
- Place into prepared pan and allow to cool.
- In a microwave safe dish, melt chocolate. Drizzle all over the bars and sprinkle with mallow bits.
- Cut into squares and serve
