I’m currently sitting outside, as I type this post, soaking up the all rest that summer has to offer. Hello August, why are you here so quickly?! I am not ready for you, can we replay July, please?
At the beginning of each summer, I always make a mental note and vow to cook and bake as much of summer’s bounty as possible. And then every year, without fail, its Autumn and the pumpkin flavor is rolling out like crazy while I’m sitting in summer’s crop dust. This was a crazy busy, but fun summer, that left us away from home most weekends and the week nights were filled with soccer, t-ball and gymnastics. I am not complaining, however. I love that my kids are active and enjoy their sports and am also appreciative that we have so much friends and family who are having celebrations left and right.
Now its August and I’m vowing to make the most of what is left of Summer and cook and bake as much of summers flavors as possible. Meaning, I promise not to post a pumpkin or fall recipe until at least September 1st. Deal? My husband will appreciate this because as of September 15th last year, he was over all things pumpkin for an entire year. Sorry, honey.
I’ll also be highlighting a post about school lunches and having a giveaway (YAY!) to ease Back into school. My first-born is heading into Kindergarten this year, so hopefully this will also help me transition him err….I mean me. While I’m not ready to send him to all day, every day school yet, he’s already waiting at the front door with his backpack filled with supplies. This fill my heart with so much joy but also sadness. I read this article today which made me cry with how spot on it is. We’ve got 2.5 weeks and counting til the first day and while I know he is ready, his mama sure is not. But there will be copious amounts of caffeine and retail therapy waiting for me after I drop him off and cry in my car for an hour.
But I’ll save the sappy stuff for a few weeks and jump right into these grilled shrimp tacos. I first had these tacos a few years back at Red Lobster. This is sort of a copycat to those tacos although the shrimp tacos they have now are different. They were my first experience with fish tacos. I had been seeing fish tacos everywhere with different versions featuring different types of fish. Now when it comes to seafood, it’s not always my first choice. However, these were so good, they had me changing my tune. Fast forward a few years later and I had forgotten all about these tacos until our recent vacation in Wyoming. My aunt made them for dinner. As soon as the shrimp came off the grill, we were eating it right off the skewers. I’m not sure how we had any shrimp left when it was time to assemble the tacos, but somehow we managed and I’m glad we did.
The smoky flavor from the grill took the shrimp to a whole new level. I could taste a hint of tequila flavor and a spicy punch from the peppers in the marinade. The taste stayed with me long after the meal and I couldn’t stop thinking about how flavorful the shrimp was. And you know what, the first meal I made when we got home from vacation, were these shrimp tacos. I loved them so much. Their bright and citrus, slightly spicy flavor, was all that I could hope for in a shrimp taco. Half of my family likes flour tortillas and half prefer corn. My only suggestion if you are using corn tortillas, is to double up. There’s nothing worse that biting down on your taco to have the shell break in half. Double up prevents this from happening, at least from both of them breaking at once. In addition to the chipotle lime sauce, we topped our tacos with a coleslaw mix, diced tomatoes, avocado and cilantro. They are the perfect summer meal.
I served these tacos with a piece of grilled corn on the cob, slathered with whipped chive and onion cream cheese and a sprinkle of shredded Parmesan cheese. Holy moly, it’s so good. The sweet charred corn with the creamy onion cream cheese and salty parmesan is perfection. It’s a great side dish for any summer meal this summer. Try it, you’ll like it.
Just look at those deliciously charred shrimp. I wish I was having them for dinner tonight. And that lime chipotle sauce, I could drink it, it was SO good. Promise me, before the dog days of summer end, make these tacos and that sweet corn and. I suggest serving with an ice-cold beer.
Grilled Shrimp Tacos
Yield 6 -8 tacos
These Grilled Shrimp Tacos are deliciously easy, fun and packed with bright citrus flavor. Topped with a chipotle lime sauce and these babies are taken to a whole other level. Throw the shrimp on the grill for a delicious charred flavor and you've got yourself a quick summer meal perfect for any time of the day.
Ingredients
- Chipotle Lime Sauce:
- 1/4 cup greek yogurt
- 1/4 cup mayonnaise
- 1 lime, juiced
- 1 chipotle pepper in adobo, finely chopped
- Marinade:
- 1/4 cup olive oil
- 4 tablespoons butter
- 2 garlic cloves, minced
- 1 serrano pepper, seeded and minced
- 1 lime, juiced
- 1/3 cup tequila
- pinch of kosher salt
- For Tacos:
- 1 pound large raw shrimp, peeled and deveined
- 6-8 soft-taco-sized flour or corn tortillas, warmed through
- 1 package coleslaw mix
- 2 roma tomatoes, diced
- 1 avocado, diced
- 1/2 cup fresh cilantro, chopped
- lime wedges for serving
Instructions
- Chipotle Lime Sauce:
- In a small bowl, mix together all ingredients and place in fridge for at least 30 minutes for the flavors to meld together.
- Marinade:
- Start by melting the butter in a medium saucepan. Add in the serrano pepper and garlic.
- Cook for a few minutes until the garlic becomes fragrant.
- Take the pot off the heat and add in the olive oil, lime juice, tequila and salt.
- Stir for 1 minute and then set aside and allow to cool to room temperature.
- Add shrimp to resealable plastic bag and add room temperature marinade. Massage the bag so that all the shrimp become coated in the marinade. Refrigerate for at least 30 minutes up to 1 hour turning every so often.
- After the marinade has set, skewer the shrimp on wooden skewers. (Make sure to soak skewers in water, for 30 minutes, prior to grilling) or use a grill basket.
- Prepare your grill and grill your shrimp over medium using direct heat.
- Grill shrimp for 2 minutes per side until shrimp is opaque. Do not overcook.
- To prepare taco:
- Fill your taco with grilled shrimp, coleslaw, tomatoes, avocado and lime chipotle sauce. Garnish with lime wedges.

*This will make 6-8 tacos depending on he size and how many shrimp you stuff in your tacos.Slightly adapted from Red Lobster at Home

*Tips for grilling shrimp. We used ” target=”_blank”>wooden skewers that we had soaked in water for 30 minutes. This prevents the skewers from catching fire when placing them on the grill. If you have a ” target=”_blank”>basket, feel free to use that instead. Shrimp are best grilled over medium heat and quickly. Shrimp cook rather fast so you want to keep an eye on them to keep from overcooking and becoming rubbery. No one wants rubbery shrimp-ACK!

No. I like to use the coleslaw as a crunchy topping like lettuce. If you’d like, instead of pouring the sauce on, you could mix the sauce into the coleslaw mix.

This is such a fun recipe to serve at cook outs! I never grill as we don’t eat meat or seafood. I always associate grilling to meat and hence never tried with anything else. I have heard thought that the flavors are amazing when grilled. Love the chipotle lime sauce.
