I don’t know about you but mornings around here are chaotic to say the least. I’ve got the dogs licking my face at 6am to go outside, one kid running down the hall as if someone is chasing him and one pushing me outta the bed so she can crawl in and snuggle with daddy. The only thing I can think about is where is my personal barista? Oh wait…that’s me. Grumble, grumble, grumble, start-up the Keurig, pour me a cup and now onto clearer thinking.
Backpack and lunches are packed, clothes are laid out…what am I missing? Oh yeah, breakfast. Gotta feed the kids breakfast. What can I feed them that isn’t a bowl full of sugar or something I can throw in the toaster. Something that can keep their mind going all through the school day. Insert breakfast parfaits and all is right in the World of breakfast.
Yeah, this is a typical morning for me. Please tell me I am not the only one who is frazzled in the a.m. How does your morning look? Are you blurry eyed until you’ve poured your first cup o’ joe like me?
One thing my children have always been good at is eating their breakfast. They may throw around their peas at the dinner table but when it’s breakfast time, they eat. Maybe their bellies are starving from sleeping all night or maybe they just really love what I serve in the morning. Who knows, but I’ll go with the latter on that one.
I’m always trying to look for something that is better for you than just having a big bowl of sugary cereal. Don’t get me wrong, I am not opposed to those types of cereals every once in a while, heck even I indulge in them occasionally. I mean let’s face it, they’re good.
I recently discovered the Quaker® Pinterest page and if you know me, you know I’m Pinterest obsessed. Their page is filled with amazing recipes of all sorts and since their products have whole grains, calcium, minimal sugar and vitamins, I feel better about what I am feeding my kids, husband and myself.
Each morning my husband takes oatmeal to work and he had just taken his last package to work. Off to Wal-Mart I went so I could stock up on his breakfasts. While I was shopping, I noticed in the breakfast aisle was Quaker Life Cereal Maple & Brown Sugar. I loved Life cereal when I was a kid but I only remembered having the original kind. In my cart it went along with the Quaker Chewy Dipps Peanut Butter Bars. My son loves granola bars so I stock up on them every time I’m at the store. He was especially happy to discover the bonus birthday cake bar and instantly declared it his.
When I got home and unloaded all my groceries, the brilliant idea of a breakfast parfait came to me. Fall is on the horizon and all I can think about is all the apple picking I’ll be doing. So I had picked up granny smith apples, apple pie yogurt and walnuts to get my mind thinking about fall baking. I didn’t realize it until I got home and had all the groceries laid out on the counter, but these ingredients were just begging to be made into Apple Pie Breakfast Parfaits.
These parfaits come together in a snap. I quickly diced up the apples, sautéed them in brown sugar and spices and stirred the chia into the yogurt. Then I layered everything into a glass and boom, done.
The aroma in my house was amazing. It smelled like Fall. I overheard my son multiple times talking about how good the house smelled and how much he couldn’t wait to eat what I was making. Words I love to hear.
Apple Pie Breakfast Parfaits

Yield 2 parfaits
Begin your day with these deliciously easy Apple Pie Breakfast Parfaits. These better for you parfaits are packed with protein, whole grains and fiber, to help keep you feeling fuller longer so you can start your day off on the right foot.
Ingredients
- Homemade Apple Pie Spice
- 1 tablespoon + 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- Sauteed Apples
- 3 Granny Smith Apples, peeled, cored and diced
- 3 tablespoons homemade apple pie spice
- 3 tablespoons brown sugar
- 1 1/2 tablespoons butter
- 3 tablespoons 100% apple juice
- To assemble parfaits
- 2 containers each- 5.3 oz Greek yogurt, I used Apple Pie
- 1 tablespoon chia seeds
- 1 cup Quaker Life Cereal, Maple and Brown Sugar
- 1 tablespoon walnuts, chopped optional
Instructions
- Homemade Apple Pie Spice
- Stir all ingredients in a small bowl and set aside
- Sauteed Apples
- Combine apples, apple pie spice and brown sugar in a bowl and mix to combine.
- Preheat pan to medium heat and add your butter.
- When the butter has melted, add in your apple juice and spiced apples.
- Saute over medium heat for 2-3 minutes and then turn down heat to medium low.
- Continue to cook until apples are fork tender, about 8-10 minutes.
- Remove from heat and let apples cool slightly.
- To assemble parfaits
- Stir 1/2 tablespoon chia seeds into each container of yogurt and place 1/4 cup yogurt in the bottom of your parfait glass.
- Top with 3 tablespoons of sauteed apples
- Top the apple layer with cereal.
- repeat layers; yogurt, apples, cereal.
- Garnish the top with any remaining sauteed apples and walnuts, optional
Notes
I recommend you assemble the parfaits just before serving. The reason being, if you pre-make the parfaits the night before, the cereal in the center will become soggy.You can make the apples ahead of time and store in refrigerator until ready to use.
