Confession time: This salad was only the 3rd time I have eaten salmon.
I tried salmon a few years ago and wasn’t fond of it. It was a little fishy for my taste so I swore it off until recently.
We had a party at our house and my friend Pam asked if she could bring over some salmon with tzatziki sauce and pita. Well sure! I love tzatziki and pita and I’m always willing to try something a second time.
The salmon she brought was delicious. So much so, I went out the next day to purchase some and make this salad. So I guess you could say I’m a salmon convert.
Sometimes foods can all depend on how they are cooked. If you have a bad dish, it can leave a sour taste in your mouth that you vow never to have again. My advice to you, try, try again. It’s the case with this salmon. Had I not tried it again, I would not have made this salad and fell head over heels in love.
Let me get on my soapbox for just a second. Salmon is healthy, full of protein and packed with healthy fats. We strive to live a healthier lifestyles and any time we can incorporate a “better for you meal” we do, for the sake of our health and for our kids.
While this BBQ Salmon Cobb Salad with Avocado Ranch Dressing wasn’t a home run with my kids, my husband and I loved it. My children ate the salad without the salmon, which is ok with me as it’s a healthy choice.
What I love about this BBQ salmon is the flavor the BBQ sauce imparts into the salmon. I’m still hanging onto summer with all I’ve got so the flavors reminiscent of a hot summer day are still welcomed around here.
Also, this salmon is cooked in the oven so no grill needed. Therefore, you can make this all year-long. The entire salad comes together in the time it takes to cook the salmon, so it’s ready in about 15 minutes. Easy for a quick weeknight meal.
But I highly recommend you try salmon again if you’ve had it before and didn’t like it. Make sure you get a good piece of salmon and spend a little extra if you need to for a sustainably raised piece. It can make all the difference.
The Avocado Ranch Dressing is awesome on any type of salad, in wraps and as a dip for vegetables. My daughter loves it so I always make extra and store it in the fridge.

I packed my salad with corn, tomatoes, eggs, bacon, blue cheese and crispy ranch flavored chickpeas <—- these are also amazing as a quick, healthy snack.

BBQ salmon cobb salad with Avocado Ranch Dressing is bursting with flavors to savor summer! Topped with a delicious crunch from ranch flavored chickpeas it's sure to be your next favorite salad!
Ingredients
BBQ Salmon Salad
1lb salmon
salt and pepper
3 tablespoons BBQ sauce
1 cup corn
1 cup cherry tomatoes
3 hard boiled eggs, chopped
3 slices bacon, chopped
3 cups romaine lettuce
Avocado Ranch Dressing
1 avocado
2 garlic cloves
1/2 cup Greek yogurt
2 tablespoons Ranch Salad Dressing & Seasoning Mix
Juice of 1/2 lemon
1/2 cup milk (more depending on desired consistency)
Ranch Chickpeas
1 can chickpeas, rinsed, drained and patted dry.
2 tablespoon extra virgin olive oil
2 tablespoons Ranch Salad Dressing & Seasoning Mix
Instructions
BBQ Salmon
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and place salmon on top.
- Season salmon with salt and pepper and spread on BBQ sauce.
- Bake in oven for 12-15 until firm and the thickest part flakes easily. Remove from oven.
Ranch Chickpeas
- Preheat oven to 400 degrees F. and line a baking sheet with foil and spray with cooking spray.
- In a medium bowl, combine chickpeas, olive oil and Ranch Seasoning mix.
- Spread chickpeas out evenly onto prepared pan and bake for 30 minutes, rotating and stirring after 15 minutes.
- Store in an air tight container for up to a week.
Avocado Ranch Dressing
- In a food processor, add all ingredients and process until smooth. Add more milk depending on your preference on desired consistency.
BBQ salmon Cobb salad with Avocado Ranch Dressing
- Place romaine into a large bowls. Line ingredients (corn, tomatoes, salmon, eggs, bacon) into rows, into the bowl, and drizzle avocado ranch dressing.
- Top with chickpeas and serve.

If salmon really isn’t your thing, no worries, chicken would be absolutely delicious in this recipe too. Just make sure you cook the chicken in the oven until an internal thermometer inserted into the largest part reads 165°
