If there’s one thing I love its cheese, followed by Mexican food. Luckily for me the two go hand in hand and what a lovely marriage that is.
Every year for my birthday, I pick Mexican food and around our house, we never miss a #TacoTuesday. It’s safe to say we’re big fans of anything with tortillas, cheese and meat. I mean how could you not be with a burrito that looks like that?!
Recently, my daughter and I were shopping and I asked her the question, “what should we make for dinner tonight?” Expecting 100% that she would say pizza, she blurted out, “burritos!” Yeah, that’s my girl!
So as we’re strolling along through Walmart we picked up the essentials to make a couple of bomb burritos for dinner that night.
My children are OBSESSED with nachos and who am I kidding, so am I. Every baseball and football game, restaurant and every where in between, you name it, and they’ve had nachos from there.
And I’m going to be honest here, because when it comes to food, I’m not joking around. I’ve searched high and low for “the one” when it comes to nacho cheese sauce so we can make them at home for our fiestas and save time and money.
Let me just tell you, I’ve found “the one.” And I promise you this is no lie. As I stated earlier “All thoughts and opinions are mine alone” so I have no reason to tell a lie. We’re talking about cheese here after all and that’s very serious business.
Ok, ok, I’ll get to the point. Ricos.Gourmet.Nacho.Cheese. Holy mother of all cheesy goodness, this stuff is so bomb diggity you will never buy another cheese sauce again. It’s liquid gold. Three cheers for Ricos!
So naturally, in our shopping trip, we picked up a few cans. I purchased the Gourmet Nacho cheese for the Braised Beef Nacho Burritos, the Ricos Condensed Cheddar Cheese for a delicious soup recipe I have coming at you next week and Queso Blanco because it never hurts to have a back stock of cheese in this house.
These Braised Beef Nacho Burritos are SUPER simple to make and can be done in the slow cooker to save even more time.
As I said, we served the Braised Beef Nacho Burritos with nachos on the side and my family gobbled up the entire meal. I was really hoping for some leftovers for my lunch the next day, but I guess when you serve a delicious and fabulous meal you can’t count on that.
Just look at the delicious cheese sauce, braised beef and hearty black beans.

Braised Beef Nacho Burritos

Packed full of delicious beef, cilantro lime rice, black beans, pico de gallo and Ricos Gourmet Nacho Cheese sauce, this Braised Beef Nacho Burritos will have you skipping take out and making your own!
Ingredients
- 2- 2 1/2 lbs beef chuck roast, trimmed of fat
- 2 teaspoons cumin
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 1 tablespoon vegetable oil
- 1/2 cup onion, chopped
- 1 jalapeno pepper, diced
- 4 garlic cloves, minced
- 1 tablespoon flour
- 3 1/2 cups beef broth
- 1/4 cup fresh cilantro
For the Burritos
- 8- Burrito sized flour tortillas
- 2 cups cilantro lime rice, prepared (I purchased a boxed rice mix)
- 1 can black beans, rinsed and drained
- Braised beef (recipe above)
- 2 cups pico de gallo
- 1 cup cilantro, chopped
- 1 cup Ricos Gourmet Nacho Cheese
Instructions
Braised Beef
- Preheat oven to 375 degrees F.
- In a large dutch oven, heat vegetable oil over medium high heat.
- Mix together cumin, salt and pepper in a small bowl and rub all over chuck roast.
- Place chuck roast into dutch oven and brown on all sides for 4-5 minutes per side. Remove roast and place onto a plate.
- Add onion, jalapeno and garlic into dutch oven and saute until soften, 5-6 minutes. Stir in flour and allow to cook for 1 minute. Slowly whisk in beef broth and stir in cilantro. Place beef back into the dutch oven and bring to a boil.
- Place dutch oven into oven and bake for 1 hour. Remove from oven, turn beef over and return to oven for 1 additional hour.
- Transfer beef to a cutting board. Slice meat against the grain, or shred with a fork.
For the Burritos
- Heat each tortilla in microwave for 30 seconds so they are pliable.
- Evenly distribute rice, black beans, beef, pico de gallo and cilantro down the center of each burrito. Pour Ricos Gourmet Nacho Cheese over the top.
- Fold opposite edges of each tortilla up and over filling. Starting from the edge closest to you, tightly roll up tortilla to enclose filling.

I am so with you on love for all the Mexican food – I’ve really enjoyed learning to make more of it since we moved to Europe, where it’s a bit harder to find than in the US, but I’ve never actually made burritos like this before. So delicious!

Oh my gosh, this looks so delicious!! Not only because of the braised beef but the nacho cheese sauce! I could probably drink nacho cheese sauce. Hi Stacey! Yes for sure. If you still want browned edges, I would still brown the meat on all sides in a pan on the stove. Then throw into the instapot for 45 minutes or the slow cooker for 8 hours on low and 4 hours on high. Hope this helps!
