It’s almost game day, are you excited?
Truth be told, I love everything about the Superbowl. From the actual game (Go Eagles!), the performances (Yes, Pink + Justin Timberlake), the commercials and the FOOD, I am all in! Might as well be a National holiday.
Did you know that, it’s estimated that more than 139 million pounds of avocados are eaten during the Superbowl? Is that insane or what. I’m loving it though because the prices right now are great, I can stock up for my daily avocado toasts.
I’ll be honest and say I found this recipe in the latest Rachel Ray magazine and I made it the very next day. I love a California Cobb salad and when placed in guacamole, how could I not?
I followed the recipe exactly, except I used my classic version of guacamole instead of hers which featured red wine vinegar which I do not put in my guacamole.
The combinations of flavors here are amazing. First off you have the salty bacon, the tangy blue cheese, the hard-boiled egg is a delicious twist and the chicken is an awesome addition. It’s a full-blown meal.
Just as I told you with the Key Lime Pie Dip, I highly encourage you to include this in your game day spread.

California Cobb Guacamole

The classics of a California Cobb salad placed into a bowl of guacamole, how bad can that be? I advise you to try this California Cobb Guacamole ASAP! Warning: Addictive!
Ingredients
- 4 avocados, halved and pitted
- juice of 1 lime
- salt and freshly ground black pepper
- 6 slices bacon, cooked and chopped
- 4 scallions, chopped
- 2/3 cup grape tomatoes, chopped
- 1/2 cup blue cheese crumbles
- 2 hard boiled eggs, chopped
- 2 tablespoons fresh parsley, chopped
- 6 ounces grilled chicken breast, diced
- tortilla chips for serving
Instructions
- Mash avocado in a large serving bowl with lime juice, salt and pepper.
- Fold in half of the bacon, scallions, tomatoes, blue cheese, eggs and parsley.
- Top the guacamole with the remaining ingredients and chicken. Season with salt and pepper to taste.
- Serve with tortilla chips

After making and loving this California Cobb Guacamole, I’m already thinking of other ways to mash-up guacamole. Avocados are one of those foods that I could eat daily and on everything.
