Instructions

  1. Mash avocado in a large serving bowl with lime juice, salt and pepper.
  2. Fold in half of the bacon, scallions, tomatoes, blue cheese, eggs and parsley.
  3. Top the guacamole with the remaining ingredients and chicken.  Season with salt and pepper to taste.
  4. Serve with tortilla chips
