We have exactly one month until school starts. Where did the summer go? I am just going to go ahead and hide in the corner. Why am I so upset about the summer ending you might ask. My baby is going into kindergarten {insert ugly tears}.
I don’t know how it happened. I blinked and she’s 5. She’s so happy and cannot wait to be in big school with her brother. I, on the other hand, am trying to think of life before children. What is it like to sit down and enjoy a FULL cup of HOT coffee? I’ll let you know in a month.
How did I fill my days before kids? I’ve worked from home for the last 9 years but didn’t have children for the first 2. All I have to say it’s going to be mighty quiet around here come Fall.
No more daytime playdates and going out to lunch with my little lady. Where you can find me is in the kitchen, whipping up delicious recipes, daily, like this Chicken Enchilada soup.
For real though, I am super happy for my daughter. She has been looking forward to going to school since her big brother first attended. She’s been in that school with me for every function and knows her way around the school. I am not one bit worried about her.
However, I am losing “my girl” during the daytime. We spend all of our days together and have for the last 2 years when my son went into school first time. Errands, chores around the house, drop off and pick up, she’s always there with me. Obviously she’ll still be here, but I’ll be doing these tasks alone. ?
Don’t get me wrong though. I’m also happy I’ll have a little free time to really get things done around the house, focus on my work and make time to prepare a delicious meal and shop for a few ingredients, solo, to make this Chicken Enchilada Soup at Walmart! Although, I said that I’ll have more time to “prepare dinner” it won’t always be like that. Between meetings, sports and after school activities, sometimes there is no time to spend chopping, sauteing and cooking a full-blown dinner. That is just the reality many parents face these days but we still want a good, home cooked meal.
That’s why this Chicken Enchilada Soup, is the perfect weeknight dinner. It takes 20 minutes, from start to finish, with a little help from my pantry friends.
I’m already training my brain to be back into school mode, so while I was shopping the other day at WalMart I picked up some essentials to restock the pantry with.
I love to use Swanson® Premium Chicken in a variety of dishes because it’s already cooked and ready to use for quick and easy meals.
I also always keep Pace® on hand. Not only is it great for after school chips and salsa snacking, which are my kids favorite, but it has great southwestern flavors that are wonderful in soups, burritos and taco salads. Not to mention it’s made with handpicked vegetables! (Don’t tell my kids!) ?
As for Campbell’s® condensed soups, those are no brainers in my pantry. They taste great and are excellent meal starters. I loved them as a kid and my kids love them too!
These products are all the makings of a hearty and warm soup. Chicken Enchilada soup is perfect all year round. My entire family loves it. And the leftovers? Even better the next day!
This recipe for Chicken Enchilada Soup is a dump and go kinda meal. Besides the onion I diced and garlic I minced, the rest of the ingredients I dumped into the pot and let it simmer for 20 minutes to warm through.
Also, because the soup all cooks in 1 pot, there’s almost no cleanup! Now that’s what I call an awesome dinner!!

Ingredients
- 1 tablespoon olive oil
- 1 medium white onion, diced
- 3 garlic cloves, minced
- 2 cups chicken stock, divided
- ½ cup masa harina
- 1 can Campbell's® Condensed Tomato Soup
- ½ cup Pace®, I used mild
- 1 can black beans, rinsed and drained
- 1 can (4 oz) green chiles, optional
- 2 cans (12.5oz) Swanson® Premium Chicken
- Cilantro, cheese, avocado, tortilla strips for garnish
Instructions
- In a medium pot, heat olive oil over medium heat.
- Add onion and garlic and saute for 2 minutes
- Pour in 1 cup chicken broth and masa harina. Whisk to combine. (mixture will be thick)
- Add tomato soup, remaining chicken stock, salsa, black beans, green chiles and chicken. Stir to combine.
- Lower heat to medium low and simmer for 12-15 minutes.
- Top with cilantro, cheese, avocado and tortilla strips if desired.

The recipe is confusing. In the Ingredients it lists 1 Cup of Chicken Broth, divided. but in the preparation it states to add “1 cup” of broth with masa harina to pot ( which is the entire amount listed in ingredients) and in the next step it says to add the remaining broth”. Where did the remaining broth come from and how much is it supposed to be? I’d love to try this. BTW, I made an enchilada casserole (I don’t roll individual pieces, just alternately layer
the ingredients) and I mix a can of enchilada sauce with a small cam of tomato sauce. You could spice this up by mixing some enchilada sauce in the recipe.
