Can you believe it’s already February?! Where in the World did January go?! The countdown is now on to Valentine’s Day, although we keep it low-key around here.
We gift the kids with small gifts, but my husband and I don’t do gifts for one another which was mutually agreed upon a few years ago. Instead, once the kids are in bed, we have date night in.
It’s been a tradition for a few years now and it’s fun to get into the kitchen together, once a year, because otherwise I’m the queen of the kitchen! So we cook a “fancy dinner” and enjoy the meal in peace and quiet, which is rare these days.
For our Valentine’s date in this year, we’ll be having Chicken Florentine for 2.
Valentine’s day falls on a Wednesday, so we’ll be postponing the festivities until the weekend because if you know anything about me, I’m in bed by 9. #truth.
If you aren’t familiar with chicken florentine, it’s a thin piece of cooked chicken with a creamy, cheesy spinach sauce spooned over the top. It’s delicious!
We’ll be serving Chicken Florentine for 2 with a tossed salad, pinot grigio and a cookie skillet for dessert. I’m already salivating just thinking about it.

Back to this Chicken Florentine for 2. This recipe comes together pretty quickly, which is another reason this is great for date night in. Our kids go to bed around 8pm so by this time, we’re starving so the meals gotta be quick.
This meal is cooked in one pan. After a long exhausting day, and enjoying a late dinner, all you wanna do is relax and hit the hay. No one wants to be in the kitchen doing dishes until midnight.

This one pan Chicken Florentine for 2 is perfect for date night in. Creamy, cheesy spinach sauce is spooned over pan roasted chicken breasts to bring dinner to the table in under 30 minutes.
Ingredients
- 4 ounces baby spinach
- 2 tablespoons olive oil, divided
- salt and freshly cracked pepper
- 2 (6 ounce) boneless, skinless chicken breasts
- 1 tablespoon butter
- 1 shallot, minced
- 1 garlic clove, minced
- 1 tablespoon flour
- 1/2 cup chicken broth
- 1/4 cup half and half, (I used fat free)
- 1/4 cup grated Parmesan asiago cheese blend
- 1/4 teaspoon lemon zest and 1 teaspoon lemon juice
Instructions
- Place chicken breasts in between 2 pieces of parchment paper and pound thin. Season with salt and pepper and set aside.
- Heat 1 tablespoon oil in a medium skillet, set over medium heat. Add in spinach and 1/8 teaspoon salt and cook until wilted. Place onto a paper towel lined plate to drain and wipe skillet clean.
- Heat remaining oil into same skillet and add chicken breasts. Cook until internal temperature reaches 165. Remove chicken breasts and place onto plate and cover with foil.
- Add butter to pan and melt. Add shallot and garlic to the pan and cook until fragrant. Add flour and stir to combine. Slowly, whisk in broth and half and half and cook over medium heat until thick and bubbly. Turn down to a simmer and cook for 2-3 minutes. Turn off the heat, add in cheese, lemon zest and juice and salt and pepper to taste. Stir in spinach.
- Place chicken breasts onto serving plates and top with sauce.
