You didn’t think I would leave you hanging and not deliver on the third and final Peach week post, did you? Sorry I was just distracted by Ice Cream Sundae Bowls and Chocolate + Wine. I mean, isn’t that all we need in life anyways?! The answer is no. No, because you need these Chicken Nachos with Peach Salsa in yo life. They’re so bomb diggity, it’s not even funny…nor is the word bomb diggity anymore…what is this Megan, 2002?
Hear me out. These nachos feature all of my favorite thing. Chicken, Beanitos (shoutout to my favorite bean chip and no it’s not sponsored. However, Beanitos, if you hear me, I’ll take a truckload, please!) Back to the nachos. They feature homemade tomatillo salsa (coming soooon) cheese and this amazing peach salsa that’s bursting with summer flavors.
I made sort of individual portions in this little trays, which were meant to feed at least 2 people, but I might have consumed the entire tray myself. I literally couldn’t stop. The same can be said for my husband. I placed the other tray in the fridge, honestly thinking they would be gross because the chips would have gotten soggy but when he got home that night, he devoured the tray and asked if there was more. Sorry dude, we both destroyed those nachos.
The other awesome thing about these nachos is they’re relatively healthy. There’s the chicken, chips (Beanitos are packed with fiber protein and low sodium) ton of veggies in the salsa and a small amount of cheese. My kind of lunch, dinner or snack. Oh and did I mention they come together in a snap? Yep, that’s right, I use a rotisserie chicken here. Thanks to the store for preparing my chicken so I could shred it and place it on top of delicious chips and make Chicken Nachos with Peach Salsa.
Believe me when I say these Chicken Nachos with Peach Salsa were phenomenal. The other great thing about this recipe is the peach salsa. There are so many uses for it. It would be delicious stuffed inside a fish taco, on top of pork, as an appetizer and it’s wonderful on it’s own. The flavors are so fresh and summery, it’s the perfect salsa to enjoy while on the patio.
The peach salsa is also very versatile. You can add and eliminate ingredients to your own personal taste. In my version I used green and red bell peppers, red onion, green onions, a jalapeno, cilantro, lime juice, and of course peaches, with the skin on to leave in a little bit of texture. If you don’t like spicy food by all means leave the jalapeno out or if you like it really spicy swap it for a habanero. Loathe cilantro? (what is wrong with you, it does NOT taste like soap!) swap in another bright fresh herb like flat leaf parsley. It’s your salsa, make it your way.
However you choose to make your peach salsa, just make sure you put it on top of Chicken Nachos.

Chicken Nachos with Peach Salsa are bursting with bright summer flavors. Featuring juicy, ripe peaches, fresh chopped veggies and herbs, perfectly cooked chicken and a homemade tomatillo sauce, these nachos will have skipping the taco stand!
Ingredients
- Peach Salsa
- 1 peach, diced
- 1 red pepper, diced
- 1 jalapeno pepper, seeded and diced
- 1 green onion, chopped
- 1/4 cup red onion, diced
- the juice and zest of 1 lime
- 1 tablespoon cilantro, chopped
- 1 bag of tortilla chips, I used Beanitos
- 1 rotisserie chicken, shredded (I used 1lb of chicken) or cooked and shredded chicken breasts.
- Tomatillo salsa (store bought or homemade) or Salsa Verde
- Toppings of your choice; cheese, lettuce, sour cream
Instructions
- Combine all ingredients for Peach Salsa and place in fridge for 30 minutes for flavors to meld.
- Arrange tortillas on a platter(s)
- Top with shredded chicken, tomatillo sauce, peach salsa and toppings of choice.
