Light and fluffy, these Citrus Poppyseed Muffins are tart and delicious with both lemon and orange juice and zest. Perfect for breakfast, on the go and with your afternoon tea!
Ingredients
2 1/4 cup All Purpose Flour
1/3 cup granulated Sugar
2 tablespoons poppy seeds
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted and cooled
5.30 fluid ounce, Greek Nonfat Yogurt
1 teaspoon Vanilla extract
2 large eggs
juice and zest of 2 lemons
juice and zest of 1 orange
Granulated sugar for sprinkling, if desired
Instructions
Preheat oven to 350 degrees and place muffin liners into your muffin pan.
Into a large bowl, combine flour, sugar, poppy seeds, baking powder, baking soda and salt.
Into a medium bowl, combine butter, yogurt, vanilla extract, eggs, lemon and orange juice and zest.
Make a well into the center of the dry ingredients and pour in wet ingredients. Mix until just combined, being careful not to over mix.
Using a scoop*, scoop batter into each muffin well. Sprinkle with sugar.
Bake for 13-15 minutes until toothpick inserted into the center comes out clean.
*I used a large scoop which holds 1/4 cup batter.
Notes
You can get anywhere between 10-12 muffins in one batch
