Crockpot Chili with Peanut Butter Sandwich Croutons combines your childhood favorite into one bowl of comforting chili to perfectly warm you to your core this crisp and cool Fall season!
I’ve got the seat warmers in my car on people! We woke up to temperatures in the 30’s this weekend and this sunshine loving girl is not ready for that.
Whenever the weather dips, my mind goes to one thing. Comfort food. I crave it and I need it fast. I also want it to warm my bones.
A favorite comfort food of ours is Crockpot Chili with Peanut Butter Sandwich Croutons. If you ever grew up in the Midwest, or know anyone who has, you know as a child, during lunch hour, you were served a bowl of chili with a peanut butter sandwich.
To be quite honest, I did grow up in the Midwest, just a little south of Chicago and I did NOT in fact get served a bowl of chili with a peanut butter sandwich, let alone a bowl of chili. Or if this was on the menu, my mother was certainly packing my lunch.
I didn’t discover the magic of chili and a peanut butter sandwich until 2 years ago when my girlfriend moved here from Iowa. It was a cold day, we were watching football and chili was cooking in the crockpot. She starts whipping out the Peter Pan® Peanut Butter and bread and I just figured it was for the kids.
Then she dipped that sandwich into her chili. The horror on my face must have been something out of a scary movie because she looked at me and was like, WHAT?! Haven’t you ever done this? Well no, no I haven’t. But I’m always up for anything so into the kitchen I went to make myself a sandwich.
Let me just tell you, you haven’t LIVED until you have dipped your peanut butter sandwich into your chili. It’s a thing of magic people. But how about some peanut butter sandwich croutons? Now we’re onto something here!
The creamy peanut butter combined with the thick, hearty chili just works and it’s absolutely delicious. You will never eat chili again without it. I only wish they served this in my school cafeteria. I’ve got a lot of catching up to do with this combo.
As I said, it’s getting colder here. We like to have Football Sundays so I decided to run out to Meijer and grab some supplies to make this Crockpot Chili with Peanut Butter Sandwich Croutons.
A few cans of Hunt’s®, Brooks® Mild Chili Beans beans and a jar of Peter Pan® Peanut Butter and I was on my way home to throw it all into the Crockpot (not the PB though)
I’m a huge fans of Brooks® Chili Beans. They have the perfect taste for chili and texture for our chili and they’re Midwestern tradition!
Peter Pan® Peanut Butter has my family’s heart so you’ll never find our cabinets without it. It’s packed with protein, wholesome ingredients and we eat it straight out of the jar, with a spoon of course!
Crockpot Chili with Peanut Butter Sandwich Croutons couldn’t be simpler because all of the work falls on the hands of the Crockpot (it’s why we’re Bff’s) Perfect for traveling in the car! Throw everything in there and cook on high for 4 hours and you’ve got a tasty chili that’ll keep you full and warm.
Within the last 30 minutes of cooking, grill up some peanut butter sandwiches, like a grilled cheese, and cut those babies into cubes. Layer them on top of your chili and you’re good to go.
Now how can you tell me that this Crockpot Chili with Peanut Butter Sandwich Croutons doesn’t look like a thing of beauty? It’s full of beans, meat, veggies and peanut butter! YUS! Now get to diggin’ in.
