This Easy Summer Beach Cake comes together quickly with a store bought Carvel® ice cream cake and fun candy decorations.
We are soaking up and loving every minute of summer this year.
In the beginning of the summer we purchased a new, larger pool and the kids can’t get enough of it. Neither can the adults!
They love to invite their friends over and spend the afternoon in the pool. Sometimes it’s hard to get them out of the pool, unless I serve them up this Easy Summer Beach Cake.
A few weeks ago, my kids wanted to invite some friends over for a little “pool party” I had no problem with it but we needed to hit the grocery store for some snacks and maybe a little dessert for after lunch time.
We went into Walmart, and in the freezer section in the bakery we spotted these Carvel® Ice Cream Cakes. We grabbed the family size sheet cake and then decided we’d jazz it up to make an Easy Summer Beach Cake.
The original ice cream cake is made with layers of vanilla and chocolate ice cream with chocolate crunchies and fresh whipped icing.
We are huge fans of ice cream cakes and I’m a huge fan of purchasing one for a quick dessert to celebrate any occasion. They’re conveniently located at your grocery store so you’re only minutes away from a smile on everyone’s face.
We used teddy bear crackers for “people” and placed them into little inter tubes. This was my daughter’s favorite part as it reminded her of her donut floatie.
Not only did my kids love to help decorate the cake, they also got a huge kick out of how adorable it turned out and delicious it tasted.
This Easy Summer Beach Cake is super easy, fun and comes together quickly thanks to a store bought ice cream cake.

This Easy Summer Beach Cake comes together quickly with a store bought Carvel® ice cream cake and fun candy decorations.
Ingredients
- 1 Carvel® Ice Cream Cakes- Family Size
- 1 sleeve graham crackers, crushed
- 1 tub vanilla frosting
- Gel food coloring (blue and yellow)
- Teddy Bear crackers
- candy stripes, cut into "beach towels" a little larger than the teddy bear size.
- Peach rings
- yellow licorice, cut into small pieces.
- Fish and/or candies
Instructions
- Place 1 tablespoon frosting into a bowl. Add 1/4 teaspoon yellow food gel coloring and stir until combined and the color of yellow is desired.
- Place 3 tablespoons frosting into another bowl. Add 1/4 teaspoon blue food gel coloring and stir until combined and a pale shade of blue.
- Place the remaining frosting into a bowl and add 1 teaspoon blue food gel and stir until combined and it becomes a darker blue than previous bowl.
- Outline a diagonal through the cake. Place yellow frosting into top left hand corner and form a sun. Place yellow licorice on the bottom of the sun to resemble rays.
- Place dark blue frosting on the bottom half of diagonal and spread to cover remainder of cake. Dollop light blue frosting all over dark blue frosting and swirl throughout to resemble waves. Place fish candy in the water.
- Decorate cake with teddy bears in peach rings and place into water.
- Place teddy bears onto beach towels and place into the sand. Add umbrellas over the bears.

Cooks Tip: Crush your graham crackers, mix your icing and cut the “beach towels” and rays of sunshine before you take the cake out of the freezer. That way, you can decorate quickly and place back in the freezer until ready to serve.
