We’re into October now so school is in full swing and I’m happy to report, we’ve got a good schedule going for us. While schedules are still hectic, with one thing after another, for the most part, we’ve figured out what works best for us.
My husband and I are preparing for a trip in about 40 days to the Bahamas (YES!) so we’ve also added a workout routine, on a daily basis, back into out schedules too.
While our lives may somewhat be figured out, that doesn’t mean I have our menu plan figured out each week. There are some days where I am not in the mood to cook, for one reason or another and that’s when I love a quick meal.
I discovered these Frontera® Bowls at Kroger recently and immediately threw them into my cart. Not only are they great for my lunch, to send with my husband to work, but they’re awesome for dinner too.
We’ve been pairing them with a salad, chips and salsa and this amazing Edamame Guacamole.
I am no stranger to guacamole (hatch chile guacamole) I could eat an avocado like an apple and so could my daughter.
One night for dinner, my husband and I were going to have a Frontera bowl, Barbacoa Taco Bowl for him and Veggie Taco Bowl for her.
I decided I would make something to go alongside while we were waiting the short time for them to heat in the microwave.
We LOVE Mexican food. I mean who doesn’t love a good basket of chips, salsa and guacamole and chicken enchiladas? If I’m in charge of picking the restaurant, you know where we’re going!
So in true Mexican restaurant fashion, I had to make some homemade tortilla chips and guacamole.
I quickly whipped up this edamame guacamole and my life has forever been changed. It’s absolutely delicious. It’s everything you put into a guacamole; garlic, onion, cilantro, some spices, avocado, plus some mashed edamame.
Not only has this rose to my favorite guacamole but it’s packed with fiber and protein to help keep you fuller longer. Paired with these amazing Frontera bowls and you’re good to go for the rest of the day or night!
The veggie bowl is packed with fire roasted fire-roasted tomatillos, peppers, corn, all put together with a delicious green chile and cilantro sauce. I am on team cilantro, so the more the better!
As for my husband, he meat and potatoes kind of guy so he loves the Barbacoa Taco Bowl which has tender beef, that has been roasted and then slow cooked and paired with ancho, guajillo, and chipotle chiles. YUM!
I also stocked up on the 2 other varieties; Chicken Fajita Bowl and Tinga Taco Bowl so we could try them all.

Ingredients
Smoky Tortilla chips
- 6 corn tortillas, stacked and cut into 6 wedges
- 1/2 teaspoon cumin
- 1/2 teapoon chili powder
- 1/2 teaspoon kosher salt
Edamame Guacamole
- 7 ounces shelled edamame, cooked
- 1/2 onion, quartered
- 2 garlic cloves
- 1 tablespoon cilantro
- 3/4 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 avocado
- 1/4 cup pico de gallo
Instructions
Smoky Tortilla chips
- Preheat oven to 350 degrees F.
- Place cut tortillas onto baking sheet and spray thoroughly with cooking spray.
- Sprinkle on spices and salt and bake for 9-11 minutes until crispy. Set aside
Edamame Guacamole
- Into a food processor, add edamame through pepper and puree until smooth. Place into bowl.
- Add avocado into bowl with edamame mixture and mash to combine.
- Stir in 1/4 cup pico de gallo

What!? This is utter genius. I’ve never thought to add edamame to by guac, but I definitely need to try it now!
