I am going to be brutally honest…This week is hell… in the best way possible. I’m so busy I am not even sure if my head is on straight. Actually, I know it isn’t.
Between #Brunchweek, which has been nothing short of epic, I’m hosting a Cinco de Derby party at our local Moose Lodge. I’m also a member of my children’s PTO and we’ve been prepping for next week’s teacher appreciation week.
We’re halfway through the week and all I can say is, pass me a mint julep and a taco because this girl is exhausted!
Thank Goodness I made these Everything Bagel Breakfast Pockets last weekend so I’d remember to feed my kids breakfast in the morning!
When I first started seeing Everything Bagel seasoning I was on it. I had my BFF’s stepmother grab me a bottle from Trader Joe’s, since I do not live within driving distance of one, and since then I’ve purchased another bottle.
The seasoning is amazing and if you aren’t local to a TJ’s you can purchase it online through Amazon.

I knew I had to use that cheese in something so I came up with these Everything Bagel Breakfast Pockets.
My kids love toaster pastries stuffed with strawberry and topped with a delicious icing and sprinkles, but I wanted something savory that would combine all our breakfast favorites.
These Everything Bagel Breakfast Pockets are a cinch to make. They’re ready in under 30 minutes so you can have savory pocket pastries whenever the craving hits and lemme just tell you, it’ll be often.
I’ve gotta give a shout out to puff pastry. That stuff is just incredible and saves you so much time in the kitchen. I used it for these Espresso Cream puffs and these Blackberry lime buttercream puffs. Both are delish!
My family loved these Everything Bagel Breakfast Pockets so much that they’ve asked me to try my hand at a sweet version too which I know will be infinitely better than the blue box you can purchase in the store. So stayed tuned for a sweet version. Any suggestions?

Everything Bagel Breakfast Pockets

These delicious Everything Bagel Breakfast Pockets have eggs, sausage and Everything Bagel cheddar cheese stuffed inside puff pastry. They’re nothing short of incredible and the best excuse to wake up!
Ingredients
- 1 box (17.3oz) Puff Pastry Sheets, thawed.
- 16 ounces breakfast sausage
- 1 tablespoon butter
- 7 eggs, divided
- 2 tablespoons milk
- ¼ teaspoon salt
- 1/8 teaspoon pepper.
- 4 ounces Cabot Everything Bagel cheddar Cheese
- ¼ cup green onions, sliced
- 2 tablespoons Everything Bagel seasoning
Instructions
- Preheat oven to 425 degrees F. and line 2 baking sheets with parchment paper or a Silpat.
- Brown sausage in a medium pan over medium heat. Remove to a paper towel lined plate.
- In a medium bowl, whisk eggs, milk, salt and pepper.
- Add 1 tablespoon butter to the same pan you browned the sausage and pour in egg mixture. Cook the eggs for 3 minutes, until they’re still soft.
- Remove from heat and stir in cheese.
- Stir in sausage and green onions.
- Roll out puff pastry onto a floured surface into a 12 x 10” square. Cut the square into 4 equal parts. Repeat with second puff pastry sheet.
- Place 1/3 cup of the egg filling onton each square. Fold over the puff pastry and crimp the edges to completely seal.
- Place remaining egg in to a small bowl and whisk.
- Brush egg wash over the puff pastry sheets and sprinkle with Everything Bagel seasoning.
- Bake in the oven for 15 minutes or until golden brown.
**I had about 1/2 cup extra filling leftover. Use in an omelet, breakfast quesadilla or a skillet.
