Everything bagel has been such the rage and I’ve been a long time fan. It’s my very favorite bagel flavor because it’s got everything you could want.
I heard of “Everything but the Bagel Sesame Seasoning Blend” from Trader Joe’s, but unfortunately, we do not have a TJ’s close to us. However, my girlfriend’s step mom works there and was heading down our way a few months ago and grabbed me a bottle (happy dance!)
Yes, it’s everything you would hope it would be but if you’re like me and you don’t have a TJ’s close, you can purchase on amazon here or you can make your own with sesame seeds, poppy seeds, dried minced onions, dried garlic flakes and sea salt. You’re welcome.
I was watching The Kitchen a few weeks ago, as I do every Saturday morning, and Katie Lee made Squash egg in the hole. Genius! I just so happened to receive an acorn squash in my Melissa’s produce box and knew immediately what I was going to do with it.
How could I make this different though? I wanted my recipe to be unique. A few quick look throughs in the cabinets and the Everything bagel seasoning was staring my in the face. Yep, totally happening.
But then I continued to think. When I have an everything bagel what do I put on it besides an egg? Well I like cream cheese and sausage and so this Everything Bagel Squash Egg in the Hole was born.
Again, use the tip I told you of yesterday in these Fall Bounty Sheet Pan Nachos about the squash in the microwave for easy cutting.
Simply take your acorn squash and cut it into 4 equals parts. Lay the slices onto a sheet pan, lined with a Silpat and drizzle with olive oil, salt and pepper. Pop them into the oven 25 minutes.
While the squash is roasting, cook up and crumble some breakfast sausage in a pan.
After the squash has cooked for 25 minutes, remove from oven and carefully crack an egg into each hole of the squash. Some may leak out under the bottom and that’s ok. As you can see a little bit of mine did. Sprinkle with salt and pepper and cook for 10 more minutes.
When the Squash Egg in the Hole comes out of the oven, sprinkle generously with Everything but the Bagel Sesame Seasoning Blend and top with crumbled sausage, goat cheese and fresh parsley and dig in!
There’s nothing better than a runny egg, sausage and cheese to get your morning started. Don’t you agree?
Everything Bagel Squash Egg in the Hole

Everything Bagel Squash Egg in the Hole is the BEST breakfast sandwich but in fork and knife form. Squash, egg, everything bagel seasoning, sausage and goat cheese, it's the ultimate egg in the hole.
Ingredients
- 1 acorn squash, cut into 4 slices, about 1/2" thick
- 1 tablespoon olive oil
- pepper
- salt
- 4 eggs
- 4 ounces breakfast sausage
- 2 teaspoons Everything but the Bagel Sesame Seasoning Blend
- 2 ounce goat cheese, crumbled
- 1 tablespoon parsley, chopped
Instructions
- Preheat oven to 425 degrees F. Line a sheet pan with a Silpat or parchment paper
- Place squash onto sheet pan and drizzle with olive oil and sprinkle with salt and pepper.
- Roast for 25 minutes.
- While the squash is roasting, brown the sausage in a pan.
- After 25 minutes, remove squash from oven and carefully crack an egg into each hole of the squash. Sprinkle with salt and pepper and place back into the oven to cook for 8-10 minutes or until the whites are set and the yolks are done to your desire.
- Remove squash from oven and place onto serving plates. Top each egg with 1 teaspoon Everything but the Bagel Sesame Seasoning Blend and evenly distribute sausage, goat cheese and parsley.

The sweetness of the squash, paired with the sharp flavors of the everything but the bagel sesame seasoning and the goat cheese, the runny egg yolk and delicious sausage is enough to have you in breakfast Heaven!
