I made this amazingly tasty and bright Grapefruit, Goat Cheese and Spinach Salad to pair alongside and I was one happy girl.

Whenever I am out to lunch, I always order a soup paired with a salad. I’m a soup and salad kinda gal.
So when it came to making myself lunch this past weekend, I knew I wanted to include a fabulous salad.
Did I mention this soup is SUPER convenient. All you need to do is add water. THAT’S IT.
And yes, it IS creamy.

Grapefruits are in season, YES, and they are a wonderful, bright, citrusy addition to any salad.
For this Grapefruit, Goat Cheese and Spinach Salad I used a spinach, arugula salad mixed with chopped cucumbers, thinly sliced red onions, goat cheese and grapefruit segments.
As for the dressing, I went with more convenience and used a bottle vinaigrette dressing I already had in the fridge, but you do you and make your own if you’d like.
The combination is fantastic and paired wonderfully with the Creamy Potato Soup.

This simple Grapefruit, Goat Cheese and Spinach Salad is a refreshing and beautiful balance of citrus, creamy cheese and crunchy vegetables.
Ingredients
- 5 ounce package Spinach Arugula Salad Mix (you can use any variety you like)
- 1 grapefruit, segmented
- 1/2 cucumber, diced
- 1/2 red onion, thinly sliced
- 4 ounces goat cheese, crumbled
- Vinaigrette dressing (store bought or make your own)
Instructions
- Place salad mix into a bowl and top with additional ingredients.
- Drizzle dressing over the top of each individual bowl and serve.
*I recommend dressing upon serving so the remaining salad doesn't become soggy.
