One of my absolute favorite things about the summer is the beautiful fruits and vegetables bursting from the stands at the Farmers Market. Our town has one every Tuesday and Saturday and I find myself going almost every week. My kids love to join me so they can get a cookie from the local bakery, which are bigger than their face, and I love to go and fill my basket with delicious corn, garlic, kale, breads and jellies. I just can’t help myself.
I unload my basket full of goodies on the table and think, oh goodness, what in the World am I going to do with all of this? But I’ll do it again next Saturday as my basket has already been eaten through. Farmer’s Market + summertime = bliss = one happy Megan.
I also have a garden each year but I haven’t dabbled into the berry bushes yet. I’m a little scared they’ll get out of control or worse, die on me. Since I started gardening 6 years ago, I’ve abandoned cucumbers, zucchini and lettuce. The cucumbers grew to be the size of footballs, I kid you not, the zucchini were running wild everywhere and the lettuce, well it just didn’t taste all that great. Maybe I need to try another variety as I eat a salad once per day. Any tips for next year?
This year, I simply cannot wait until my tomatoes are ready for the pickin’ I’ve got 2 types of heirlooms, roma, cherry, big boy and beefsteak. As for peppers I’ve got green, red, purple (YES!) jalapeno and banana. Then I also have basil, lavender and rosemary. Do you have a garden? If so, what are you growing in yours?
Anyways, moving on. I’d love to grow berries, especially raspberries, they’re my favorite. When I was a little girl I would pick the raspberries off my neighbors bush as they’d poke their little vines through the fence. They were just begging for me to pick and eat them and I did just that. Every year when I purchase the first carton, it takes me back to when I was a little barefoot girl running around my backyard with red juice squashed all over my face.
My family loves strawberries and I do too but they’re a close second to raspberries. My dad had a garden when we were growing up but he couldn’t ever get the strawberries to stick around as the bunnies would eat them daily leaving us with none. Therefore, I’ve been hesitant to start growing them myself.
So I find myself in the grocery store weekly to purchase a bounty of berries. I just so happened to be watching Dinner at Tiffani’s on Cooking Channel and she was making a tri-berry trifle. As soon as the episode was over, I immediately went into the kitchen to whip up my own take on her recipe. I love her show, by the way. Her recipes, her personality and the pure simplicity and delicious of her recipes are genuine and a real pleasure to watch. I find myself bookmarking at least one of her recipes from every episode show I’ve ever watched.
Bonus, this Lemon Berry Trifle is patriotic with strawberries, blueberries and whipped cream AND it’s SUPER simple. I’m talking like 10 minutes simple. I purchased a store-bought pound cake, whipped up some instant lemon pudding with whip cream folded in and went to layering.
I made this when my dad was in town for the kid’s birthday party and the hubs was smoking a brisket. The Lemon Berry Trifle was the perfect slightly sweet, slightly tart dessert to round off our delicious BBQ dinner. It was light and refreshing and bursting with berry flavors.
I don’t know about you but when I think of berries I also think of lemon, so I went with lemon pudding as well as the zest of a lemon. The original recipe is vanilla pudding which you could certainly do.
That bite was luscious. Is that an appropriate food term? Sounds kind of dirty but I don’t really care because it was so on point and decadent.
Lemon Berry Trifle

Celebrate the bountiful berries of the season with this Lemon Berry Trifle. Strawberries, blueberries, raspberries and blackberries are layered between tart lemon pudding, whipped cream and studded with delicious pound cake. The perfect summer dessert for all your backyard parties!
Ingredients
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 box Jell-O Lemon Instant Pudding & Pie Filling, 3.4 Oz (I used sugar free-fat free)
- 2 cups milk
- One store-bought pound cake, cut into cubes (6 cups)
- 1 cup strawberries, chopped
- 1 pint blueberries
- 2 pint raspberries
- 2 pins blackberries
- teaspoon of lemon zest
Instructions
- Place the bowl and whisk attachment of your stand mixer into the freezer for 30 minutes.
- After 30 minutes, remove bowl and whisk, attach to stand mixer and add in heavy cream.
- Beat for 1 minute and then add in powdered sugar.
- Beat until soft peaks form and set aside.
- In a medium bowl, add in your pudding mix and milk and beat to combine for 2 minutes.
- *Fold in most of your whipped cream and set aside. *(Reserve 1/4 cup of whipped cream for a dollop on the top of trifle)
- Place enough cubed pound cake into the bottom of your trifle bowl to cover.
- On top of the pound cake, place half of the whipped pudding mixture and spread.
- On top of the whipped pudding mixture, place 1/2 cup strawberries, half the pint of blueberries, 1 pint of raspberries and 1 pint of blackberries.
- Next, place the rest of the pound cake on top of the berries and then top with the rest of the whipped pudding mixture.
- Sprinkle on the remaining berries, reserving a few of each for the top to garnish.
- Garnish the top with a few of each of the berries, a dollop of whipped cream and a teaspoon of lemon zest.
- Refrigerate for 2 hours.

We do have raspberries growing in our yard and they are doing quite well. The blueberry bushes, not so much. Every year I have to deal with the birds getting them before we do, and then this year I discovered one of my dogs is eating them too! LOL My son video taped her pulling the raspberries off the bush and eating them. I’ve got to get out there and get picking before they get them all!! Anyway…your trifle looks delicious! I love fresh berries as well. And strawberries are my favorite. I’ve always wanted a garden but just don’t seem to have a great spot for it. Would love some garden tomatoes cause there is nothing better than a fresh picked tomato. This lemon berry trifle sounds like the perfect summer treat!

I would be the happiest person eating this berry filled trifles. We have a large garden and each year we learn something new. This is going to be our first year gardening in the new place and I will be experimenting a lot for the next couple of years. We do have a few fruit trees planted this year. Hopefully they do well.
