We absolutely love a NY Strip Steak and we always purchase them at The Fresh Market. This iconic steak is cut from the loin and beloved by meat-eaters. It is also know as Kansas City steak.
Some people can be intimidated by cooking steak and you shouldn’t be. A sprinkle of TFM Signature Spice Rub, a quick grill over direct heat and you’re good to go with a tender and juicy steak prepared to your liking. (See degree of doneness in recipe card).
Everyone likes their steak prepared differently and topped with a variety of options. I personally love some sauteed mushrooms and gorgonzola, while my husband prefers something a little sweet and heat. I decided to create 3 compound butters to appeal to everyone.
- Gorgonzola Scallion- Arguably my favorite because I love gorgonzola melted over a steak. This one combines gorgonzola cheese with chopped scallions for a tangy, pungent butter you’ll love combined with the tender steak.
- Mushroom Peppercorn- To me, nothing is better than sauteed mushrooms on top of a steak, unless you can make a compound butter and allow those mushrooms to melt over the steak.
- Mango Jalapeno- This one has all the sweet heat you could ever want. Grab a mango, jalapeno and cilantro at The Fresh market, puree it up and add to softened butter.
For this Fourth of July spread, I also picked up some fresh fruit, Patriotic chips and taffy in fun red, white and blue packaging.
Oh and let’s not forget about the dessert. I picked up this delicious, show stopper of a Red, White and Blue Cheesecake and these Patriotic Cake Bites. They both looked so festive and delicious and I knew they’d be a hit!
I already had plates, napkins and decor, as we host a fourth of July party every year and there’s always extras, that I just added to the tablescape to bring everything together.
Don’t forget it’s super hot out there so provide plenty of beverages to drink. I placed some water bottle in a bucket with ice and made sure to refill as soon as they got low.

Ingredients
Mango Jalapeno Compound Butter
- 1/2 cup unsalted butter, softened
- 1 mango, peeled and diced
- 1 jalapeno pepper, seeded and diced
- 2 tablespoons cilantro, chopped
- 1/2 teaspoon salt
Mushroom Peppercorn Compound Butter
- 1/2 cup unsalted butter, softened
- 1/2 ounce mushrooms, finely chopped (I used portabella)
- 1 tablespoon freshly cracked pepper
- 1/2 teaspoon salt
Gorgonzola Scallion Compound Butter
- 1/2 cup unsalted butter, softened
- 4 ounces gorgonzola cheese, crumbled
- 2 tablespoons scallions, finely diced
- 1 teaspoon freshly ground black pepper
NY Strip Steaks
- 4 (6oz) USDA Prime NY Strip Steak
- 4 teaspoons The Fresh Market Signature Spice Rub and Marinade
Instructions
Mango Jalapeno Compound Butter
- Place mango into a food processor until very finely diced, almost to a puree. Place mango a bowl with butter, jalapeno, cilantro and salt. Mix to combine. Place into a piece of plastic wrap and roll into a log. Please into refrigerator to chill for 2 hours.
Mushroom Peppercorn Compound Butter
- Place mushrooms into a food processor and process until very finely diced. Place mushrooms into a bowl with butter, pepper and salt. Mix to combine. Place into a piece of plastic wrap and roll into a log. Please into refrigerator to chill for 2 hours.
Gorgonzola Scallion Compound Butter
- Place butter, gorgonzola, scallions and black pepper into a bowl. Mix to combine. Place into a piece of plastic wrap and roll into a log. Please into refrigerator to chill for 2 hours.
NY Strip Steaks
- Remove steaks from the refrigerator and allow to come to room temperature. Rub 1 teaspoon seasoning all over the steaks.
- Prepare grill for direct heat. Place steaks onto grill, cover and cook until bottom is browned, about 3-4 minutes. Flip and cook for an additional 3-4 minutes. Remove steaks from grill and allow to rest.
- Top with compound butter of choice and enjoy.
Doneness Chart (these temperatures are according to the USDA)
Rare- (red center) 125 degrees internal temperature
Medium Rare- (warm red center) 135 degrees internal temperature
Medium- (warm pink center) 145 degrees internal temperature
Medium well- (slightly pink center) 150 degrees internal temperature
Well done- (little or not pink) 160 degrees internal temperature

Cooks tip: Don’t save this NY Strip Steak with Compound Butter 3 ways for the summer. You can easily make the steak indoors, with a grill pan or dare I say in the oven? Just sear all sides, in an oven safe pan, and transfer to a 400 degree oven until desired doneness.
