You guys, I am having massive anxiety about the first day back to school. Every store I enter is bursting at the seams with back to school supplies and I.am.not.ready. I am not ready to return to a schedule. I really enjoy the lazy days of waiting for my alarm (my kids) to wake me up, snuggle in my bed until we damn well please and mosey on out to eat breakfast. There’s no rules, no places to be on time and no real decisions to make besides which bathing suit we’re going to wear to the pool today.
Please Summer, don’t end. Whether I like it or not, the first day of school will be here before I know it. But, in the meantime, I will be drowning in sorrows in the bounty of the season starting right here with these delicious, sweet, juicy and tender peaches.
I have officially declared this week Peach Week ? and I’ve got 3 yummy recipes to bring you all of which I’m super pumped for. In other news, I should probably take my son on our back to school supply shopping date before all the Pokemon items are all sold out and I have one sad little 6-year-old who will be the only 1 in first grade without a Pokemon lunchbox or something {insert eye roll} ? and no, I don’t play Pokemon Go…
Peaches, oh how I love thee, let me count the ways. Muffins, oatmeal, pie, juices running down my forearm, peach margaritas, etc. Peaches are one of my favorite things of summer. I mean how could you not love them. The farmer’s markets are bustling with the ripest peaches just waiting to be baked into a pie or sliced and wrapped with prosciutto.
Every year, we go on our annual road trip to Wyoming to have a family reunion and this year we no different. Only difference was the amount of people who increased to 25 in one household. Insert chaos. Honestly, though, it’s really not that bad unless you want to take about the bathroom situation and how there are only 2, yes 2 bathrooms for 25 people. 18 adults taking showers, endless bathroom breaks from too many blueberry Moscow mules and copious amount of children taking nightly baths to scrub off all the fun they had throughout the day. Wouldn’t have it any other way and I’m already counting down until next July.
As my Aunt Christy does every year, she made her family famous Peach Pie. It’s.so.good. The minute one comes out of the oven, she’s making another one because the first has already been picked at until the last person is seen licking the pan. This year was the same as in the past but lucky for the first batch, we got first priority while half of my cousins went camping…suckas… more for us. No, not really, she made another one for when they came back down the mountain. She’s a wonderful lady ?
I love to make her peach pie at home too, but with this round of peaches I decided to make muffins. This was a few weeks before our road trip and I was looking for ideas on healthier car snacks to appease the family on our 17 hour drive. I decided to make peach muffins that would serve as breakfast and top them with an oatmeal crumb topping.

Start your morning with these delicious Peach Oatmeal Crumb Muffins. They're super moist and tender, studded with sweet, juicy peaches and are overflowing with an irresistible oatmeal crumb topping. These just might be your next favorite muffin recipe and for good reason!
Ingredients
- 1 1/2 cups all purpose flour
- 1 cup whole wheat flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1/2 cup brown sugar
- 3 tablespoons applesauce, unsweetened
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup peaches, peeled & diced (2 whole)
- Oatmeal Crumb Topping
- 1/4 cup old-fashioned oats
- 1/4 cup flour
- 1/4 cup brown sugar
- 3 tablespoons butter
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 400 degrees and line a 12 cup muffin tin with papers
- In a medium bowl, combine dry ingredients (flours through salt) and whisk to combine.
- In a separate bowl, combine wet ingredients (buttermilk through vanilla) and incorporate
- Make a well in the center of your dry ingredients and pour the wet ingredients into well.
- Stir until just combined, being careful not to over-mix.
- Fold in peaches.
- Using a medium scoop, scoop muffin batter into prepared tins until 3/4 full.
- In a small bowl, combine ingredients for the crumb topping until it forms pea-size clumps.
- Top each muffin with a generous handful of oatmeal crumb topping and bake in oven for 15 minutes or until a toothpick insert into the center comes out clean.
- Place on a wire rack until completely cooled.

These Peach Oatmeal Crumb Muffins came out beautifully and are so SUPER simple to make. From start to finish it took 30 mins and then cooling time. The juicy peaches lend a sweetness while the crumbly oatmeal topping is the perfect balance. My family loves them and yours will too!
