There’s nothing better than a brownie and cookie mixed together except when they’ve been mashed up with peppermint. These Peppermint Hot Chocolate Brookies feature a layer of chocolate chip cookies, peppermint sandwich cookies, a layer of brownies and then topped with dark chocolate, crushed peppermint and mini marshmallows.
Tis the season for all the treats! As soon as pumpkin season is over I’m scouring the grocery store for all things peppermint and gingerbread. Nothing says the holidays to me quite like the flavors of the season. I LOVE Christmas and baking so this year is especially my favorite. A few years ago I vowed to make a cookie every day in December and I did just that. And let me tell you, when it came time for the annual passing out of treats to all our neighbors and friends I was so thankful I had a freezer stocked of goodies I had been making all year long.
Usually I power bake and then I’m exhausted and grouchy, which will happen this year because I am behind on everything in life this year. Such as life but it’s not getting my spirits down. I’ve got a light week coming up and I see pounds of butter in my future and I am quite fine with that. Sometimes I even take a few shortcuts thanks to Immaculate Baking Company and their delicious and wholesome products.
Sometimes I go a little overboard on the flavors of the season but one flavor that has always remained one of my favorites is peppermint. It’s in my coffee, my desserts and my ice cream much to my husband dismay. Last year I made Peppermint Hot Cocoa Cookies bars and Chocolate Peppermint Cookies. Well this year, I kind of decided to mash all of them together to create Peppermint Hot Chocolate Brookies.
I decided to take a little shortcut with these, which is perfect fine and no one will know the difference. I used Immaculate Baking Company Gluten-Free Chocolate Chunk Cookie Dough and their Organic Fudge Brownie Scratch mix. Both of these are absolutely delicious organic and gluten free. I’ve been a fan of their cinnamon rolls for so long, and my kids love them, so I thought the holidays would be a perfect time to use their other baking products. We are not disappointed.
I start by placing the chocolate chunk cookie dough on the bottom of an 8×8 pan. Then I layered on peppermint sandwich cookies, mixed up the brownies (which require very little ingredients) poured them over the cookies and then baked them for 45 minutes.
When they cooled, I drizzled dark chocolate over the top, crushed peppermint candies and itty bitty little marshmallows.
In the words of my favorite Elf, “Son of a Nutcracker” were these ever decadent, amazing and screaming Merry Christmas! I couldn’t get over how fudgey and moist the brownies were! Everything I look for in a brownie. Also, I was so nervous that the cookie layer would over baked, because quite frankly who bakes their cookies for 45 minutes, but they were amazing! So don’t worry about over baking them.
The peppermint candies and mini marshmallows were the perfect addition to take these Peppermint Hot Chocolate Brookies over the top and really make them shine this holiday season. It also helps that Immaculate Baking Company and their products are yummy!

Peppermint Hot Chocolate Brookies

These Peppermint Hot Chocolate Brookies feature a layer of chocolate chip cookies, peppermint sandwich cookies, a layer of brownies and then topped with dark chocolate, crushed peppermint and mini marshmallows.
Ingredients
- 1 package Chocolate Chunk Cookie Dough
- 16 Peppermint Sandwich Cookies
- 1 box Fudge Brownie Scratch mix
- 1 stick of butter
- 2 tablespoons water
- 2 eggs
- 1/3 cup dark chocolate, melted
- 2 tablespoons candy canes, crushed
- 2 tablespoons Marshmallow bits
Instructions
- Preheat oven to 325 degrees
- Line an 8x8 pan with aluminum foil
- Place Chocolate Chunk Cookie Dough into the bottom of the pan and spread out.
- Top with peppermint sandwich cookies
- Prepare brownie mix and pour on top of the cookies
- Bake for 40-45 minutes or until brownies are cooked through.
- Allow to cool in pan for several hours.
- When cooled, remove from pan and drizzle chocolate over the top. Sprinkle with candy canes and marshmallow bits.
- Cut into 16 squares.
