Who here was a Girl Scout? ? Yes, I sure was. I correction, My mother and I, spent many years selling cookies, door to door, so I could earn my badge, meet the troop quota and reap all the fun goodies, hello t-shirt and water bottle. I always wondered why cookie selling time was in the winter. Maybe because cookies are comforting when your hunkered down in single digit weather, snuggled under a blanket, hibernating for the long Winter ahead. I dunno but I’d much rather sell them when it’s warm out.
I’ll never forget the year my mom and I went around delivering the cookies to all the gracious people who had purchased from me that year. It was January and the dead of Winter. My mom was kind enough to let me stay in the car, staying warm, while she bundled up and headed into the cold. As soon as the last box of cookie was delivered, we quickly headed home. There, we hunkered down, under a comforter and consumed a sleeve of Thin Mint cookies while she rested her tailbone.
Nowadays, I am not sure what time of year the Girl Scouts sell cookies but we hang out with our neighbors and her daughter, she’s a Junior, sell them, sot I don’t have to wait until someone comes knocking on my door to purchase a box…or ten. Minus the ice incident, I have fond memories of being a Girl Scout. We’d do fun activities, crafts, volunteer, sing Christmas carols to the neighboring business and bond. It was a special time for me and all my girlfriends to hang out in an environment that promoted making a difference, either big or small, with the people and community around you.
My daughter is 4 and when she is old enough, which is only a year away, when she enters Kindergarten, I’ll talk to her about becoming a Daisy and about what fun I had meeting new people, exploring the outdoors and learning new skills and the Girl Scout Promise. What I truly loved about these new Pillsbury Girl Scouts Baking Mixes, I could stir up a memory with my child and tie it in to being a Girl Scout and what it meant to me when I was a Daisy. It was a great bonding experience for her to get into the kitchen with me and bake up these amazing Caramel & Coconut Blondies and Thin Mints® Brownies.
My daughter and I headed into Target to check out the baking aisle to see what type of goodies we could bake up for the new neighbors. We have recently had 3 homes in our neighborhood go up for sale and only 1 new move in so far. What I love to do when someone new moves in, is greet them with goodies and welcome them into the neighborhood. It’s a great lesson to my children about friendship and courage and being brave enough to go out and meet new people. So off to the store we went.
I instantly spotted the Pillsbury Girl Scouts Baking Mixes. I didn’t have to look any further. And because we have other vacant homes in the neighborhood, I purchased all four varieties:
- Girl Scouts® Caramel & Coconut Blondie Mix
- Girl Scouts® Caramel & Coconut Cookie Mix
- Girl Scouts® Thin Mints® Brownie Mix
- Girl Scouts® Thin Mints® Cupcake Mix
I didn’t require anything else from the store as the additional ingredients are everything I stock in my pantry so off to home we went to bake up our new goodies. We could hardly wait.
What I love about these Pillsbury Girl Scouts Baking Mixes is they are super simple to make, require very little ingredients and feature the flavors of Girl Scout Cookies everyone loves. We immediately got to work in the kitchen.
Look at those chunks of chocolate in the brownie mix and the chocolate and caramel chips in the Caramel & Coconut. I may or may not have put the egg in after I took a big spoonful of the brownie mix. SO GOOD!
While the Caramel & Coconut Blondies and Thin Mints® Brownies cooled, my daughter and I headed downstairs to design a tag we could tie to a bag of goodies for the neighbors. Here is what we came up with

When everything had cooled, we cut them into squares and placed them into bags. We also poured ourselves tall glasses of milk and enjoyed the fruits of our labor. Pillsbury seriously nailed this combo. While the Thin Mint Brownies were cooking all I could smell was mint wafting through my house, which by way is one of my favorite flavors on the Planet. I also love Coconut so this afternoon just got so much better.
We decided to match the Caramel and Coconut Blondies with the turquoise tag and coordinating ribbon. All of these craft supplies can be purchased at your local craft store and will last you a long time.
For the Thin Mints® Brownies we decided to go with the purple tag to complement the turquoise one and also switch it up a little bit and bring in more cheerfulness. We’d be delivered both bags to the new neighbors so we wanted variety. We also included a pink version to offer 3 colors so you can match any project.
We were so pleased with those this project turned out and our new neighbors were ecstatic that we would take the time to come over, introduce ourselves and bring them treats. They were happy to be in the neighborhood and felt very welcomed.
