I am the only one still wondering where in the heck summer went? Or should I say mourning over the loss of summer?
I know it’s not technically over for 4 weeks but I’m constantly seeing posts about pumpkin spice this and pumpkin spice that. Here I am over here giving you this Pineapple Ginger Lemonade. Keeping my fingers crossed that maybe it’ll go viral next year since I’ve clearly missed the boat this year. I promise Fall goodies are coming!
I didn’t want summer to go by without posting this and since I technically have 1 month until summer is officially over, I thought I would sneak it in there.
Everyone is a huge fan of this Mango Green Tea Lemonade so I wanted to try something new this year. We’re huge fans of pineapple so when they go on sale I’m guilty of buying a few of them, and like my bananas, having them sit on the counter until they’re almost past their prime.
I’m also a huge fan of ginger and knew that combining both pineapple and ginger would be a delicious combo.
And when I think of the quintessential drink of summer and what really quenches your thirst, I think of lemonade? Am I right?!
So this Pineapple Ginger Lemonade was born and it couldn’t be easier. Also, why just drink this in the summer? I mean it literally screams sunshine but this would be perfect when there is 5 feet of snow on the ground and you were wishing for warmer days.

Ingredients
Ginger Simple Syrup
- 1 cup water
- 1/2 cup sugar
- 4 ounces thinly sliced unpeeled fresh ginger
Pineapple Ginger Lemonade
- 2 cups pineapple juice, fresh or from a can (100%)
- 48 ounces lemonade, I use 15 calorie Light Lemonade
Instructions
Ginger Simple Syrup
- In a small saucepan, bring sugar, water and ginger to a boil over medium high heat, stirring until the sugar is dissolved. Allow to cool to room temperature and then strain. Place into refrigerator to chill.
Pineapple Ginger Lemonade
- In a large pitcher, stir together pineapple juice, lemonade and about half the ginger syrup.
- Pour into glasses, with ice cubes, and add more ginger syrup as desired. Garnish with a pineapple and lemon slices.
*For an alcoholic version add rum, vodka or tequila!
