I love them because they are super simple to put together, practically zero dishes and easy cleanup.

HOW DO YOU PREPARE PORK CHOPS WITH SUN DRIED TOMATO FOIL PACKEETS
Start with a large, rectangular piece of heavy duty aluminum foil.
Place sun dried tomatoes, artichokes, torn basil leaves and butter into the middle of the packet.
Top with a bone in pork chop. Spread additional herb butter all over the top of the pork chop and sprinkle with mozzarella cheese.
Bring up the long sides of the foil, into the center, and fold over, rolling all the way down.
Take the other two sides of the foil, and roll up towards the center.
Make sure not to roll too tightly to allow some of the steam to escape.
Grill over direct heat for 25 minutes or until a meat thermometer inserted in center reads at least 145°F.
This is the best foil packet recipe because, from start to finish, it’s ready in under 30 minutes.
CAN I PREPARE THIS IN THE OVEN?
Of course! If it’s not grilling season (and I get that, I live in the Midwest) you can prepare these Pork Chops and Sun Dried Tomato Foil Packets in the oven.
Set oven to 400 degrees F and place foil packets onto a sheet pan. Bake for 25-30 minutes or until a meat thermometer inserted in center reads at least 145°F.

These Pork Chops and Sun Dried Tomato Foil Packets are a delicious, easy cleanup meal that the whole family will enjoy!
Ingredients
- 4 Smithfield All Natural Bone-In Pork Chops
- 10 oz sun dried tomatoes
- 14 oz can artichokes heart, quartered
- basil leaves, torn or chopped
- 4 tablespoons herb butter*
- 1/2 cup mozzarella cheese, shredded
*you can purchase herb butter in the refrigerated section of your grocery store. Or you can make your own by using room temperature butter and mixing in minced chives, parsley and any other herbs you have on hand.
Instructions
- Preheat grill. Cut 4 (18x12-inch) sheets of heavy-duty foil and spray liberally with cooking spray.
- Place sun dried tomatoes, artichokes, basil and herb butter into the center of the foil. Place pork chop on top.
- Rub additional herb butter on top of pork and top with 1/4 cup mozzarella cheese on each pork chop.
- Bring up the long sides of the foil, into the center, and fold over, rolling all the way down.
- Take the other two sides of the foil, and roll up towards the center.

These pork chops are so tender and juicy!
Some of the oils combine from the sun dried tomato combine with the butter to create a delicious sauce in the bottom of the packet that you can spoon over the pork as you eat it.
