I’m not sure about your children but when I pick my son up from Kindergarten around 3pm, he’s starving. They eat their lunch at 11am so by the time he jumps in my car, he’s hangry. I usually have homemade trail mix packs in the car, filled with his favorite treats, but sometimes I forget or his sister and I will eat them while waiting for him…sorry kid!
Both of my children love Goldfish® Crackers, so I’ll throw a handful in a snack baggie with some dried cranberries, chocolate chips and almonds. It’s the perfect on the go snack and I’ll prepare 5-7 baggies on Monday so they’re ready for us all week to just grab and go.
But as you may know, kids can get tired of the same ol’ snack day in and day out. So I got to thinking how could I take one of their favorite snacks and turn it into an after school snack, that’s easy, delicious and fun? Insert Pretzel Crusted Chicken Tenders with Blackberry honey mustard sauce.
As I just mentioned, my kids my family loves Goldfish® Crackers. Whenever I pour my kids a bowl, I find myself grabbing a handful before I give it to them as they’re crying at me, “Mom, don’t eat all my Crackers!” Then I proceed to go into the kitchen and pour myself a bowl. Every.single.time.
Personally, I am partial to the pretzel ones but my kids love the cheddar and so does my husband. I was so delighted to see that Wal-mart sells a new Goldfish® Mix which features both cheddar and pretzel! How amazing is that?!
I was on a mission to create these chicken tenders though, so I went with my usual purchase and got 1 carton of pretzel and 1 carton of cheddar because I’m lazy and I didn’t want to pick out the pretzel ones for this recipe. Next time, I’ll be purchasing the mix though.
So I went home to see how this new afternoon snack would go over with my son. I started with chicken breast tenders which are so convenient because they are already cut into strips for you but you could easily use boneless, skinless chicken breasts and cut them into strips or even chunks if you want to make chicken nuggets.
Then I set up my breading station. An easy way to remember what goes into a breading station is F-E-B (Flour, Egg, Breadcrumb) In this case, my breadcrumb was Goldfish® Pretzel Crackers. I also used whole wheat flour and egg white to make this a smarter snack choice.
Once I had all the chicken tenders breaded, I popped them into a 375 degree oven for 20 minutes and let them bake.
While they were baking, I made the Blackberry honey mustard dipping sauce to go alongside. In a bowl, I combined mayonnaise, sugar free blackberry jam, yellow mustard, BBQ sauce, honey and a pinch of salt. Whisk to combine and that’s it. Easy peasy and lemme tell you, so amazingly delicious. Please don’t be turned off by the color of this sauce. It pairs wonderfully with the Pretzel Crusted Chicken Tenders.
Woah, can I just say, I wish I had these growing up as a kid for my afternoon snack. The Goldfish® Pretzel Crackers were the perfect coating for these chicken tenders. It gave them a salty, crackery crust that paired beautifully with the sweet, yet tangy, blackberry honey mustard sauce. I’m a girl who loves sweet and salty and these nailed it.
I couldn’t wait for my son to get home from school that afternoon to enjoy his snack. We paired them with apples and a glass of milk. And you know what, he LOVED them! He was so surprised and that it was so cool that they were coated in Goldfish® Pretzel Crackers! He’s such a dipper when it comes to his food and he loved that this blackberry honey mustard sauce was a little on the sweet side-thanks to mister honey bear.
We loved them so much, we decided to make more together, so we could enjoy them for dinner and show daddy how fun it was to eat Goldfish® Pretzel Crackers on our chicken! Daddy was also a fan, as well as sister, so that makes these Pretzel crusted chicken tenders with blackberry honey mustard sauce a win-win for our family and have permanently gone into our dinner rotation!
Pretzel Crusted Chicken Tenders with Blackberry Honey Mustard Sauce

Ingredients
- (Chicken Tenders)
- 1 lb chicken tenders
- ⅓ cup flour (I used whole wheat)
- 3 eggs whites
- 3 ounces Goldfish® Pretzel Crackers, crushed
- (Blackberry Honey Mustard Dipping Sauce)
- ¼ cup mayonnaise
- ¼ cup Blackberry jam, I used sugar free
- 2 tablespoons BBQ Sauce
- 1 Tablespoon yellow mustard
- 1 1/2 teaspoons honey
- pinch of salt
Instructions
- Preheat oven to 375 degrees. Line the bottom of a sheet pan with foil and place a wire rack on top, sprayed with cooking spray
- Set up your breading station and dip each chicken tender into the flour, then egg and finally into the Goldfish® Pretzel Crackers. (Be sure to really pat in the crackers so it thoroughly coats each tender)
- Place coated tenders onto wire rack and bake for 20 minutes.
- While the chicken tenders are baking, prepare your dipping sauce.
- Add all ingredients to a medium size bowl and whisk to combine.
These Pretzel Crusted Chicken Tenders are absolutely delicious. They are perfect as a snack, for dinner paired with some vegetable or as an appetizer at a party. And for the blackberry honey mustard dipping sauce, I want to put it on everything. I’m thinking a ham and cheese sandwich with the blackberry sauce as a spread would be fantastic!
I also loved that my son was so excited that he wanted to help me in the kitchen and prepare dinner. And for once, dinner time was a joy. We weren’t arguing with my son to take just, “one more bite” He ate every last piece and declared it was the best dinner (and snack) he had! That makes for one happy mama!
