Tonight I’ll be packing a lunch, labeling the last of the school supplies and laying out the perfect outfit for the first day back to school. And after the kids are all nestled and snug in their beds, I’ll be drowning my end of summer sorrows into these delicious Pure Protein Plus Chocolate Chip Cookie Dough Pudding Protein Parfaits.
We are in the full swing of summer and boy are things ever busy.
We are wrapping up swim lessons, t-ball and gymnastics and I’m a little sad to see it go.
My son starts school tomorrow and one thing is for sure, I am not ready for it. He on the other hand is super excited to be in first grade and can’t wait for the school year to begin. Me, I get a little depressed when I see the first signs of school supplies in the ads and in the stores.
It’s like when Christmas decorations start appearing in the store before my kids have even gone trick or treating.
While I was perusing my local Walmart, stocking up on school supplies, I also had to get some wipes and paper products from the list so I took a stroll down the protein bar aisle and stopped dead in my tracks when I happened upon the Pure Protein Plus Chocolate Chip Cookie Dough Bars.
Now I am a sucker for protein bars but chocolate chip cookie dough-SOLD.
Now I’ve had Protein Plus bars before but these are NEW. They are high protein, high fiber and low in sugar. All of the things I look for in a protein bar. I immediately purchased a box and stashed them away in my house so no one would eat them. {insert evil mom laugh}
I’m a huge protein bar fan. As I mentioned above, I feel like quite the taxi service when school is in session, more so than in the summertime.
My son is in elementary school and my daughter in a preschool across town. So for me, a quick, on the go, protein packed snack is exactly what I need when I’m bolting out the door.
Many protein bars on the market are high sugar snacks, exactly what is going to put me in a lunchtime slump so these Pure Protein Plus Bars fit the bill.
I enjoyed the first Pure Protein Plus Chocolate Chip Cookie Dough Bar as is and it was delicious, chewy and had a slight crunch from the large amount of chocolate chunks.
As I was scurrying around trying to round up all the back to school items to get organized for the first day of school tomorrow, I decided I wanted a slightly more, but still low sugar treat for when the kids went to bed as a kick off to the school year, party for one, send off to summer, fit mommy style decadent parfait.
I started with sugar free/fat free chocolate pudding and prepared that as the box directed using nonfat milk.
I love those pudding boxes as the pudding is ready in 5 minutes. When it set, I layered that in the bottom of my parfait dish and chopped up my Pure Protein Plus Chocolate Chip Cookie Dough Bar and layered the chunks on top of the pudding. I added another scoop of pudding and then added a dollop of fat free whipped topping to the top followed by smaller pieces of the Pure Protein Plus Bar.
I couldn’t run to the refrigerator fast enough when the last child was fast asleep. I grabbed that spoon and immediately dug in time and time again until I was licking the glass clean. It was exactly the indulgent, low sugar treat I needed to ease the back to school blues and keep myself on track during the busy rush of life.
Protein Packed Chocolate Chip Cookie Dough Parfaits

These Protein Packed Chocolate Chip Cookie Dough Parfaits are a low calorie, low sugar, indulgent treat thanks to Pure Protein Plus Bars.
Ingredients
- 1 box sugar free, fat free pudding
- 2 cups fat free milk
- 4 Pure Pure Protein Plus Chocolate Chip Cookie Dough Bars, chopped
- Fat free whipped topping
Instructions
- Prepare pudding as directed by whisking milk into pudding and letting stand for 5 minutes.
- In the bottom of your parfait glass add 2 tablespoons of the pudding and spread out.
- Top with chunks of Pure Protein Plus Chocolate Chip Cookie Dough Bars reserving a few for the top.
- Layer on another 2 tablespoons of pudding.
- Dollop with whipped cream and sprinkle with reserved Cookie Dough Pieces

I think you will absolutely love these as much as I did. I mean how could you not…just look at that luscious bite?!
I also love that Pure Protein Plus Bars come in a variety of flavors. They have Cookies and Cream, Mocha Brownie and Apple Pie which are all fabulous as well. These bars are perfect for me to keep in my car, purse, and sports bag. The taste is great and pleasant unlike some other chalky protein bars on the shelf. My family loves them and it keeps us on track during our very active lifestyle.

I am the complete opposite to you when it comes to back-to-school. I always find myself counting down the days until school starts again. Maybe that is because I have a teenager 😀 Love the look of the parfait. What a great simple idea.

LOL! My kids are still little (Lord, help me when they’re teenagers) and in 1 more year, I’ll have 2 in school full time. I may be shoving them out the door at that time for a little peace and quiet! 😉

I’m not sure what the UK equivalent of the pudding box would be… but I love the idea of popping a protein bar into a pudding! Chocolate and macro needs met in one ^_^

Absolutely. We have instant Jell-O pudding in a box that you just add milk and whisk. You may want to check in the baking aisle of your supermarket, there may be something similar 🙂
